Try Daisy Cooks. Daisy Martinez is Cuban, I think and does fabulous Latin Cuisine, including Caribbean. You cannot go wrong with her recipes.

She also has a cooking show on PBS

Here in Florida there's a lot of frozen bags of cut up root vegetables like yucca, sweet potatoes, slices of corn on the cob, and other potato-like roots from the tropics.
So I make a chicken soup with that and add lots of red hot pepper sauce, ginger, coconut milk, fresh lime juice, garlic, peppers, and lots of fresh cilantro.

Also try coconut shrimp.
Make a batter (like just flour and milk and spices) with grated coconut in it. Dip the peeled shrimp in the batter and fry them in oil. Serve them with some hot sauce.
