i bought some salami about 2 or 3 weeks ago. It has no mold on it and it was refridgerated but I'm a little skeptiacal that meat can last that long.

What kind of salami? That lunch meat stuff like Oscar Meyer? Time to throw it out. Real salami though is kept unrefrigerated for up to a year. The really good stuff is always aged.

If it's the sliced pre-packed stuff maybe it's time to throw it out. On the other hand if it's one of the unsliced big salamis then it should last a lot longer. I used to buy the big ones from Costco and they'd last for about 3-4 months (and certainly long past the sell by date on the label - I never pay too much attention to those anyway!). Just cut a couple of slices off the end where it's dried and you'll be ready to go.

Salami is a cured meat, therefore the normal time frames do not apply. It will last quite a bit longer than your average ham and turkey deli meat.

about 2 or 3 weeks but if its any longer dont eat it even if theres no mold b/c microscopic mold and bacteria can grow
