Anzac biscuits - an australian recipe everso easy and delicious
You need:
1 cup each of plain flour, sugar, rolled oats and coconut
120 grammes of butter, melted
1 tablespoon of Golden Syrup
2 tablespoons of boiling water
1 teaspoon of bicarbonate of soda dissolved in a little water

Method:
Mix together dry ingredients
Then the rest
Spoon onto a greased oven tray
Cook in a coolish oven 150-160 centigrade for 10 to 15 minutes

I have a couple good ones....one is for pumpkin cookies....my grandmother used to make these for the holidays every year but she hasn't been able to make them for several years and another is a recipe that a friend give me and he says they are really good..and the no bake chocolate peanut butter cookies are yummy too....

Pumpkin cookies:

1 c. oil
1 egg
1 c. sugar
1 c. pumpkin
2 c. all purpose flour
1 t. soda
1/2 t. salt
1 t. cinnamon

icing:
3 T. butter
4 T. milk
1/2 c. brown sugar
1 c. confectioner's sugar
3/4 t. vanilla

Preheat oven to 350 degrees. In a large mixing bowl, mix cookie ingredients together. Drop by spoonfuls onto baking sheet and bake for 10 minutes.

While cookies are bakin, in a saucepan, melt butter. Once butter is melted, added brown sugar and let cool. Be careful not to let it cool completely or it will harden up and will have to be reheated. Add confectioner's sugar, milk, and vanilla. Icing should be at spreadable consistency. Spread over cookies

Texas Lizzies

1 stick butter, room temp
1 box light brown sugar
4 large eggs
3 1/2 c. all purpose flour
3 t. baking soda
1 t. ground nutmeg
1 t. ground cinnamon
1/2 c. whiskey
3/4 lb pecans, chopped
1 box golden raisins
8 oz red candied cherries, chopped
8 oz green candied cherries, chopped
3/4 lb walnuts, chopped
1 1/4 c. dark raisins

Preheat oven to 350 degrees. Grease several baking sheets. In large bowl, beat butter until smooth and creamy. Beat in sugar until light and fluffy. Beat eggs one at a time. On low speed, beat flour, baking soda, nutmeg and cinnamon in butter mixture. Add whiskey. Stir in the nuts, raisins, and candied cherries. Drop dough by rounded tablespoons, placing 2 inches apart. Bake 10 to 12 minutes

Chocolate Peanut Butter Cookies

2 c. sugar
1 stick butter
4 T. cocoa
1/2 c. milk
3 c. oatmeal
1/2 c. peanut butter
1 t. vanilla
1/2 c. coconut (optional)
1/2 c. raisins (optional)

In a medium saucepan, add stick of butter and let it begin to melt. Add sugar, milk, and cocoa and bring to a boil. Once the mixture has boiled, remove from heat and add oatmeal, peanut butter, and vanilla. More peanut butter can be added if desired. If desired, add the raisins and coconut. Spoon mixture onto wax paper and let cool. Once cookies have set up, refrigerate in container.

STAINED GLASS COOKIES


1 cup granulated sugar
2 sticks butter
2 large eggs1 tsp. pure vanilla extract
3 cups all-purpose flour
assorted, brightly-colored hard candies
1 large star cookie cutter
1 small triangle cookie cutter


Cream sugar & butter until smooth. Add egg & extract. Mix in flour. Remove dough, press into a triangle shape & wrap in plastic wrap. Refrigerate for at least an hour. Place hard candy, by each color, into small plastic bags. Place a towel over the bags & crush bags w/meat mallet. Preheat oven to 350 degrees F. Remove dough from refrigerator & cut into thirds. Roll out dough, one piece at a time, to 3/16” thickness. Cut out as many large stars as possible. Repeat w/all of the dough. Cut out small triangle from each arm of each star. Place all of the cookies on parchment-paper lined sheet pans. In each of the triangle holes, fill with different colors of crushed candies. Bake for 10 to 15 minutes, or until lightly golden brown, and the candy has melted. Cool completely on wire racks.


Yield: About 48 Cookies

CHOCOLATE CANDY CANE COOKIES


1 8-oz. package softened cream cheese
¾ cup softened butter
1 cup gran. Sugar
2 tsp vanilla
2-½ cups flour
½ tsp baking soda
4 squares semi-sweet baking chocolate, melted
1 6-oz. package white baking chocolate
12 hard peppermint candies, crushed


Preheat oven to 350 degrees F. Beat cream cheese, sugar, butter & vanilla in large bowl w/electric mixer on medium speed until well blended. Add flour & baking soda; mix well. Blend in semi-sweet chocolate. Shape tablespoons of dough into 52 balls. Roll each ball into a 3” lonh rope. Place 2” apart on baking sheet, bending top of each slightly to resemble candy cane. Bake 10 to 12 minutes, or until lightly browned. Cool 5 minutes on baking sheet; transfer cookies to wire rack & cool completely. Microwave white chocolate as directed on package; drizzle over cookies. Sprinkle with crushed candies. Let stand until chocolate is firm.


Yield: 52 Cookies

EGGNOG COOKIES


1 cup buttered, softened
2 cups granulated sugar
1 tsp. baking soda
1 cup Borden eggnog
½ tsp. ground nutmeg
5-½ cups all-purpose flour

Icing:

3 cups powdered sugar
¼ cup butter, softened
1/3 cup Borden eggnog


Beat butter & sugar until fluffy. Add eggnog, soda & nutmeg; mix well. Gradually add flour; mix well. Divide dough in half. Wrap half in plastic wrap & chill overnight in refrigerator or 2 hours in freezer. Preheat oven to 375 degrees F. On a floured surface, roll out half the dough to 1/8” thickness. Using floured cookie cutters, cut out desired shapes. Place 1” apart on ungreased baking sheets. Continue w/rest of dough until all is used. Bake 8 to 10 minutes, or until lightly browned. Cool; ice & decorate as desired. Icing: Beat together sugar & butter until well blended, using an electric mixer. Gradually blend in eggnog until icing is smooth.

NUTMEG MELTAWAYS


1 cup softened butter
½ cup granulated sugar
1 tsp. vanilla
2 cups all-purpose flour
¾ cup toasted, ground almonds
1 cup powdered sugar
1 tablespoon ground nutmeg


In large bowl, cream butter, sugar & vanilla. Gradually add flour; mix well. Stir in almonds. Shape into 1” balls. Place 2” apart on ungreased cookie sheets. Bake at 300 degrees F for 18 to 20 minutes, or until bottoms are lightly browned. Transfer to wire racks & cool completely. In small bowl, combine powdered sugar & nutmeg. Gently roll cooled cookies in powdered sugar mixture.


Yield: About 30
