I saw it on the news and really didn't understand what that means in law enforcement terms... someone was arrested, they resisted and were subdued quickly? Whats that mean generally? What actions are taken?

Subdued means to be taken down and handcuffed.

Usually it means that they were wreslted to the ground and excessive action was taken to calm them into accepting the fact they are being arrested. That could be pepper spray, a knee to the neck while the arm is forced to the lower back and handcuffed. Whatever they have to do to calm the suspect and get them to jail. They have a very hard job, police officers have to be able to fight to protect themselves and everyone else.

Subdue is to restrain someone that is violent or is trying to run from the law.

Watch the show "Cops" sometimes. You see a LOT of people being "subdued". It sometimes entails several officers of the law sitting on them.

I law enforcement lingo, "subdue" means to "beat the living hell out of anybody who dares to question authority".
