Make sure you always have lots of fruit+veg in your haouse that you actually like :D Hav 1 or 2 with every meal, and, if necessary, some in between. Remember that fruit juice, beans and raisins also count (but only once a day each). And you don't have to be completely exact: some days I have 4, some days I have 7 :D

Spread them out over the day , also if you get bored with the same fruits , make up a simple fruit salad with a variety of fruit and eat some each day
At lunch have a tomato and some cucumber with your sandwich .
If you don't already have one , buy an inexpensive steamer and you can put more than one type of vegetable in at a time
You just need to think ahead , and be a bit innovative.

It's not that hard if you enjoy fruits and veggies.
I eat 2 servings of fruit and 3 or more of veggies. I eat a piece of fruit mid-morning for a snack and another in the afternoon.
I have a salad at lunch or dinner and 2 types of veggies with my dinner. A serving is only 1/2 a cup so it's not as much as you might think. Don't forget like things like Spaghetti sauce are full of tomatos and lycopene and you can easily get at least 2 serving there.

Easily!
Don't think of fruit and vegetables as a chore, pick ones you enjoy.
I conquered it by making fruit/vegetables the focus of a meal instead of just an accompaniment that I 'had' to eat. So now my meals revolve around fruit or vegetables.
You have to have will-power and it becomes easier over time.
