I am following instructions for freezing apples, and need a solution of ascorbic acid to stop discolouration....does anyone know where I can obtain it?

Squeeze lemon juice over them.

Ascorbic Acid is the chemical name for vitamin C. However, the only reason for buying Vitamin C is if you think you may not be getting enough in your normal diet as any excess is excreted anyway. The best way to stop apples, pears and the like from discolouring is to use lemon juice. The high quantities of citric acid will prevent the fruit from going brown. The reason why some fruits discolour and others don't is that the main acids (usually malic acid or tartaric acid) in them are less acidic than citric acid.

Discolouration of apples before freezing can be stopped
by using lemon juice, & salt. Ascorbic acid is found in lemons anyway.
Prepare apples leave them in salted water, & with lemon juice.
Blanch them in the same water. Means bring up to boil in a
saucepan, without cooking , still firm
Then , quickly refresh.Means drain in a collander, followed
by immersing in cold water, until slices are no longer hot.
Use collander again, drain well. Then bag up pieces in
see thro' plastic food bags. Freeze.
No discolouration will take place. Apple, still in nice pieces.
Salt maintains apple pieces firmness aswell, & enhances
flavour.No prob, because when you use frozen apples you
can sweeten accordingly.
Takes longer to explain , than do .....!

It is Vitamin C and you can buy Ascorbic Acid from the Chemist.

Need to explain why as it is sometimes used in the processes of manufacturing illegal hallucigenic substances.

Why not use lemon or orange juice?

You can get it at the grocery store...Walmart also carries it..usually found where the canning supplies are...Ace Hardware also sells it

Apples
Preparation – Syrup Pack is preferred for apples to be used for uncooked desserts or fruit cocktail. A sugar or dry pack is good for pie making.

Select full-flavored apples that are crisp and firm, not mealy in texture. Wash, peel and core. Slice medium apples into twelfths, large ones into sixteenths.

Syrup Pack – Use cold 40 percent syrup. To prevent browning, add 1/2 teaspoon (1500 mg) ascorbic acid to each quart of syrup.

Slice apples directly into syrup in container starting with 1/2 cup syrup to a pint container. Press fruit down in containers and add enough syrup to cover. Leave headspace. Place a small piece of crumpled water-resistant paper on top to hold fruit down. Seal and freeze.

Sugar Pack – To prevent darkening, dissolve 1/2 teaspoon (1500 mg) ascorbic acid in 3 tablespoons water. Sprinkle over the fruit. Or, apple slices can be steam blanched for 11/2 to 2 minutes.

Mix 1/2 cup sugar with 1 quart (1 1/4 pounds) of fruit. Pack apples into containers and press fruit down, leaving headspace. Seal and freeze.

Dry Pack – Follow the directions for Sugar Pack, omitting the sugar. Treated apple slices can also be frozen first on a tray and then packed into containers as soon as they are frozen. For more information, see other unsweetened packs.

Lemon juice "contains" Asorbic acid and the bitter flavor of the lemon.

ascorbic acid is found in citrus fruits like lemon,orange,etc.........so you may use juice of lemon as a source of ascorbic acid........or it may be available at any drugist store........

There is a product on the market that is designed just for cleaning dishwashers, unfortunately I can't remember the name. I bought the product in a local super market.
