can anyone give me an easy spanish marzipan cookie recipe? i found one online but it didnt say to add eggs, doesnt every cookie need eggs? recipes please!!

Janosch is the famous athor of the great stories about the little Tiger and the little bear. My mum send me shapes of my favorite childhood caracters and this is the second of 2 recepies which came with them. You also find the other one on Zaar, it is called Janosch Birthday Cookies. Enjoy!

100 g marzipan
150 g flour
75 g butter
150 g sugar
1/2 teaspoon salt
1 egg white
100 g chocolate

1.Mix everything until soft and shiny.
2.Put the dough between plastic foil and flaten out.
3.Cut out shapes.
4.Bake at 180°C for 10 minutes.
5.Melt the chocolate on the stove over steaming water.
6.Decorate the cookies with melted chocolate (this can be fussy but it is fun as well).

No. Not all cookie recipes call for eggs.

MARZIPAN COOKIES

1 c. butter, softened
1/2 c. sugar
2 1/2 c. all-purpose flour
1 tsp. almond extract

Cream butter and sugar. Stir in flour and almond extract until mixture looks like cornmeal. Roll out and cut into different shapes (may be colored if desired). Place on ungreased cookie sheets. Chill 1/2 hour. Bake at 300 degrees for 30 minutes until set, but not brown.

Marzipan means it is almond flavored. If you buy the almond extract you will not regret it. You can make some other great cookies with almond extract too. Instead of vanilla extract I use almond extract in buttercream icing and get so many compliments on my cakes. But you have to like almond flavor to appreciate it- I do. I would definitely make it with almond extract instead of vanilla to get the true taste of marzipan (which I happen to love.) You could also put a little almond extract in your coffee or tea for a different flavor.

It isn't spanish, it's danish, but delicious

Ingredients

1 x pastry dough - danish
4 ounces almond paste
4 tablespoons butter softened
1/4 cup sugar
1 x egg slightly beaten
1 x sugar
1 x almonds sliced
6 oz chocolate - melted

Directions
Filling: Beat almond paste, butter, and sugar in a small bowl until smooth and well blended.

Roll pastry on floured surface to two 20 x 15 rectangles. Trim edges
evenly. With a sharp knife cut into twelve 5 inch squares.

Spoon filling onto one corner of each square, dividing evenly. Starting with filled corner, roll square up to the diagonally opposite corner. Place point side down 2 inches apart on cookie sheet. Curve into crescent shape.

Let rise in a warm place until doubled in volume, about 30 minutes.

Brush with egg; sprinkle with sugar and almonds. Place in hot oven (400 F) lower heat immediately to 350 F, then bake 20 to 25 minutes or until puffed and golden. Remove to wire rack; cool.

Dip ends in melted chocolate, place on waxed paper to cool and set.
