vegetable casserole salad
1 pkg frozen peas(cooked and cooled),2 carrots,shredded or grated,small onion,chopped,1 small head of lettuceshredded,2 stalks celery chopped,1 (8oz) jar of mayonaise,1 (8oz) container of sour cream
mix all vegtables together in large bowl.Mix mayonaise and sour cream together in a small bowl. spread mayo and sour cream mixture over the vegtables and cover with plastic wrap and refrigerate untill ready to use . when ready to use ,mix dressing and vegtables together and top with crumbled bacon.

DINNER:
Christmas Prime Rib Roast

Ingredients:
9 lbs prime rib roast (de-boned and wrapped)

Rub Roast Genetously with:
garlic salt
pepper, let sit for about 1 hour (try to reach about room temp.)

Directions:
1.Preheat oven to 400°.

2.Place prime rib on rack in roasting pan fat side up.

3.Do not cover.

4.Sear for 20 minutes at 400°.

5.Then lower the temperature to 325° for about 2 1/2 hours.

6.Using a meat thermometer, check to see if done.

7.Remove from oven, cover loosely with foil and let rest at least 10 minutes (time to get last minute stuff done).

8.Remove the rib bones

9.Slice into 1 to 1 1/2-inch slices.

3 large eggs
1 1/2 cups milk
1/4 cup butter, melted
1 cup cheddar cheese, grated
1 medium onion, chopped
1/2 cup self-rising flour
salt & pepper
325 g asparagus, canned drained (optional)

1/2 cup bacon, chopped and pre-cooked to half done (optional)

Directions:
1.Preheat oven to 180 degrees Celsius.

2.Beat eggs and milk.

3.Add melted butter and flour. Beat to combine.

4.Add cheese and onion, stir.

5.Pour into greased pie dish.

6.Arrange asparagus spears, salmon, or bacon on top.

7.Bake in center of oven for 45 minutes.

Eggnog Christmas Pound Cake

Ingredients:
1/2 cup dried currants or raisins or cranberries
2 tablespoons dark rum or water
1 cup unsalted butter, room temperature
2 cups sugar
3 large eggs, room temperature
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon freshly grated nutmeg
1 cup eggnog, mixed with
1 teaspoon vanilla extract
1 tablespoon grated orange zest

glaze ingredients:
3 tablespoons orange juice
1 tablespoon dark rum
3/4 cup granulated sugar

Directions:
1.Soak currants in rum in a small bowl for 15 minutes.
Adjust rack to lower third of oven. Preheat the oven to 325°F (350°F if the pan doesn't have a dark finish). Butter a 9 to 10 inch bundt pan.

2.Using an electric mixer on medium speed, beat butter until creamy, 30-45 seconds.

3.Add sugar and beat until light and fluffy, about 5 minutes. Scrape bowl with a rubber spatula occasionally as needed. Add eggs one at a time, beating well after each addition.
In a separate bowl, sift together flour, baking powder, salt and nutmeg.

4.At very low speed, add dry ingredients in 4 additions, alternating with eggnog (begin and end with dry ingredients). Scrape bowl occasionally. Gently fold in orange zest, currants and any remaining rum.

5.Spoon batter into pan; spread evenly. Bake 55-65 minutes, or until cake springs back when touched lightly in the center and pulls away from the sides of the pan. You can also use a long toothpick or thin bamboo skewer and insert into the thickest part of the cake. If it comes out clean, it's done.

6.Remove from oven and cool upright in the pan on a rack for 10 minutes.

7.Prepare glaze by blending together sugar, orange juice, and rum.

8.Invert cake onto a rack, over a sheet of waxed paper.

9. Use a pastry brush to brush the surface of the cake with the glaze.

10.Cool completely before serving.

1 (200 g) packet biscuits (Arnotts Chocolate Royal)
40 g white chocolate
12 imitation cherries
green icing

Directions:
1.Melt white choc in microwave.

2.Drizzle white chocolate icing over top of biscuit.

3.top each with a imitation cherry (or Jaffa sweet)

4.decorate with green icing (1/2 mint leave or other green jelly sweet works well here).

5.Place in fridge to set.

22 slices pepperoni, sliced thin and 1 1/2-inches in diameter
cheese, of your choice, cut in 2-inch long, thin julienne strips
carrots or zucchini, cut into 2-inch long, thin julienne strips or bell peppers, cut into 2- inch long, thin julienne strips or kohlrabi, cut into 2-inch long, thin julienne strips
fresh herbs, for garnish (dill, basil, parsley or tarragon)

Directions:
1.Cut thin slice off bottom of each olive, forming a flat base. Roll up slice of pepperoni and place inside pitted end of each olive.

2.Fill center of each pepperoni slice with desired combination of cheese, vegetables and herbs.

3.Stand olives on serving plate.
