Why is it not okay to change others to meet modern needs?
(Maybe allowing women priests, accepting gays into the fold, and relaxing the rules on celibacy to attract more men to the priesthood?)

They've already made some changes - like moving the Sabbath to Sunday to make conversion more appealing to Romans (who usually prayed on Sunday). There's no reason they couldn't make others, *IF* it suits their purposes.

The Church cannot accept women into the priesthood as that would be in violation of apostolic succession. Jesus selected only males and so have the apostles and their successors. Gays are accepted but those practicing as homosexuals are living in sin and may not receive the Sacraments. However they can reconcile with the Church by repenting of their sin. Allowing married priests is a possibility, and is currently allowed under special conditions and outside the Latin Rite, since this is just a discipline. I am a married priest.

There is a difference between Church law (discipline) and the doctrines - faith teachings of the church.

Church law (discipline) can change, but doctrines can’t.

Eating meat on Friday and married priests falls under the category of church law (discipline). Note: there are some married priests in the Catholic Church -- Ukrainian Catholic's have some.

Women priest's falls under the category of doctrine/faith teachings. In 1994 Pope John Paul II formally declared (using his office -- the Seat-of Peter as head of the Church) that the teaching that women cannot be priests is part of the doctrine of the faith (this was already understood implicitly from tradition and previous teachings).

Dogmas don't change but Church practices, e.g., celibacy can change.
