Okay, so I know that I'm sorry is "tha mi duilich" and I love you is "tha gaol agam ort"
But how would you say "I'm sorry, but I don't love you."?

It would be:

"Tha mi duilich ach chan eil gaol agam ort."
(Hah mee doo-likh akh khahn-yel gewl ak-kum orsht)

ach = but
chan eil = not / don't

ch is a gutteral sound like German auch, Hebrew Chaim.

(The Celtic languages are very old. Their grammars and linguistic structures are not at all like English. In some respects they are more like Russian and Armenian which like Celtic, are also very old members of the Indo-European language family. )

Hope that helps.
