I know they're strict with liquids onboard, but what if it's a gift and in my checked-in luggage (not with me at my seat)?

As long as it's in the part of the plane without passengers.

Why would you? Its not like there is not going to be any beer at your destination. But... As long it is in your checked on baggage its no problem. Just a lot of extra weight to carry that you don't have to.

Yes you can check alcohol into your checked luggage, you just can't bring it on the plane.
