I currently work for a resteraunt/bar/grill/club in Florida and am thinking about starting a non-profit program. Besides getting backing from the establishment I wish to do it with, whats the best way to start it up? Start by joining with other established organizations and slowly build? Try to create a new program? Etc. I am thinking about doing something with alcohol, but am open to any ideas.

There should be many organizations in the area you can work with.
Lions, Knights of Columbus, Jaycees, Kiwanis or even churches. All of these organizations can help you.

First you might want to take a look at the resources available at the Foundation Center - http://www.foundationcenter.org

They have a list of resources for individuals looking to start a nonprofit org, including an online tutorial that walks you through the process.

Once you are familiar with the process you can decide if you want to start your own org or if you miight better serve your cause by teaming up with a related and welll-established organization. A benefit of teaming up with another organization is that they most likely have the processess and staff in place to obtain funding, and you can concentrate on providing the services to assist your target population.

You should partner up with a similar organization while maintaining your independence as a 501(c)(3) organization. Make sure you incorporate in your state and secure the 501(c)(3).

We started a NPO called SOFTIN (seafaring opportunities for those in need) We work with drug and alcohol rehabilitation programs, handicap children and adults, as well as the mentally challenged. We went through a company that helped us get all the paperwork together and send it in to the IRS. If you'd like their phone number email me and I'll be happy to give it to you. They have a 100% success rate on starting NPO's. The other side is funding for your NPO, I can help you there as well. Email me with your email address and I'd be happy to send you information on that as well.
