Once you PAY the ticket, it gets posted on your record as a conviction.
Why do you want to take the driving school NOW?? Just keep the opportunity as "an ace in the hole" for the NEXT time you get a ticket!
Everyone says "Ask your insurance agent.." - well, that's pretty dumb as your insurance agent (or broker) doesn't care if you take the school or not.....it's up to the COURT system to allow it (for a ticket.) Rates change with the States - some companies recognize the Defensive Drive Course and discount some for it, and others do not.
If you don't HAVE a local agent, look around and GET one.

Technically, you are allowed to go to traffic school only once a year. If the tickets are from different counties, they may not communicate with each other. If you elect traffic school, you would have to go to two different sessions because you only get one certificate per visit. Based on your slow learning curve, this may be beneficial

if you are in california, you will need to go to court and ask a judge to let you do traffic school.
your best bet is to go to court and try to fight the ticket
