why do you need to hang slaughtered cattle for so long if you are planning on providing fresh meat?

Skipper is right about the enzymes breaking down the muscle fibers and tenderizing the meat.The length of time it should hang is determined by how much fat is on the outside of the meat. A thicker fat layer means a longer hanging time.

Some cattle are hung for a while under very controlled conditions of humidity and temperature. The reason for this is that enzymes in the cell begin to react on the protein and produce more flavorful and more tender meat. The enzymes are broadly known as cathespins. I don't remember the exact conditions but if you're just hanging one single cow don't bother. Some of those answers are just plain wrong.

No idea for beef.. but since it is at hand two minuets and then hang..
Hanging does provide for the removal of most blood..
Hanging makes skinning far easyer and removal of the organs that are most prized...cleanlyness can be maintained and washing is made easy..
you should check the Discovery Ch. on 'how it is done'...

Just take your cow to the slaughterhouse and let them take care of all of it. I don't think you save that much by killing and processing it yourself. We used to take deer to the packing plant when I was a kid and I know it wasn't expensive if my parents could afford it lol. You'll probably get more out of the meat too if you let professionals do it.
