Simple origami, like snowflakes and animals. There are hundreds of web sites with instructions (example below), so just grab some coloured paper. Plus it's fun for both of you!

Saturday a week before Christmas.
Sledding (we have snow)
Make your own pizza for lunch.
Bake cookies, buy icing to decorate.
Get an $8 gingerbread house kit and do that.
Bring art supplies and make Christmas decorations.
Go to a craft store and get some Polymer clay ($1) a brick and make some ornament for the tree.
Help him/her write a Christmas letter to his/her parents. Not a wish list but what they liked about their life since last Christmas and what makes them good parents.
A second grader boy/girl is into doing real things. Things that an adult can do but they may need a little help with.
Being a week away from Christmas the craft and grocery store will have a ton of ideas. If you can't take them to the store go yourself tonight and be ready for a great day tomorrow.
I have a 16 yr old who is ditching the family for friends this weekend and a 3 yr old and we have already done the gingerbread house kit and made some cookies.
Tomorrow we are taking little wood cut outs (butterflies, trains, cars, dogs, cats) that cost about 20 cents a piece, putting a magnet on the back and he is painting/stickering and glittering them as gifts for the grandparents.
They won't be beautiful in the traditional way because I am letting him do it himself but they will be forever in the hearts of his grandparents.

Start with an activity or game. Then have some outside time if possible, and really wear them out! A meal, a movie, and maybe some more artwork.
At 8 or 9 years old, attention span is about 20 minutes tops (unless watching a good movie).
Good luck.
