im having roast chicken

Do not follow my husbands example. By the time it reached the table it resembled brown playdoh.

Add a couple of good quality chicken stock cubes to about 1/2 pint of water and pour UNDER the chicken sitting on the roasting tin rack.

About 1/2 hour before bird is ready, drain liquid off into another pan along with all the bits stuck to the bottom! Using bisto, thicken. Lovely!

remove the chicken from the roasting pan. add flour to the pan to make a thin paste. cook on low(burner) for 1 minute.add chicken broth either canned or from boulion or base slowly till you get the right consistency while stirring constantly with a wire whisk. This is called pan gravy because you are using the natural drippings in the pan it was cooked in. You can add a touch of orange juice or cranberry juice if you want to be FANCY. you can also add Gran mariner or other types of liquor for a different flavor.

2 cups chicken stock
3 tablespoons cornstarch
1 teaspoon poultry seasoning

DIRECTIONS
Bring chicken stock to a boil. Dissolve cornstarch in a small amount of cold water and add to chicken stock. Season to taste with poultry seasoning and cook until thickened. Serve!

Go buy one in a jar. That's what my daughter taught me. I make wonderful gravy, so long as it's not for a turkey.

Mix your corn starch or flour in cold water and add to the pan stuff... cold tap water
Corn 1Tbl /Cup
Flour 2 Tbl /Cup
dilute to your preference...
