They each have a place that sounds good. This all comes down to personal preference.
There are tons of violin and piano, the same with the flute and sax. If you want a good one with a harmonica and piano, just listen to "Piano Man" or Weird Al's comedy version of it "ode to a superhero."

If I have to choose one I'd say violin, but that's because I love violin and my wife plays it.

I would go with violin or flute. I believe Mozart wrote some concertos for piano/violin and piano/flute (I'm not 100% sure) and even though I don't like the classic as much as the Baroque, they still sound lovely. Saxophone and harmonica, I find, sound better solo and with guitar, respectivly. But that's just my opinion. With the right musicians, anything can sound nice.

I have a key board which produces all of these sounds. Perhaps not as good as the real instrument but still acceptable and it does depend on what you play. Each instrument gives something to the particular piece being played. Eg. 'John Browns Body' sounds great on the harmonica or banjo.
