with stainless steel, you generally don't cook it so high, and it takes some practice on how to get things to turn out right. but, just try lowering the temperature and see how that does. and when you think it's done, just turn it off, and take the pan off the burner, cause there is some reserved heat in there that will continue to cook ur food.

Stainless steel does that - I had to get a different pan for making chocolate gravy and some candies because the chocolate burns really easily in them. Turn the heat down - maybe get a cheap non-stick pan for things that are especially prone to sticking.

You're keeping the heat too high. If it's particularly stuck on the walls of the pan, it's definitely a sign that you have the heat to high and wasting gas on the process.
I'm a chef and wouldn't use anything else. Stick (no pun intended) with them and you'll get the hang of them soon enough.

The only stainless I have now are pots...for liquid stuff
But YES your cooking too hot.
Frying is best done with Teflon...
