I bought this girl from work that I like a coffee and she wrote to me: "I don't drink coffee but since you were the one to get it for me I had to drink the entire cup.." what should be my response?

Well, she is not really saying it in a bad way. She is saying since YOU bought it for her she drank it when she did not even like coffee. Maybe tea, next time?

She obviously likes you, why dont you write her a note back that says something like
That was really sweet, would you like to chose the drinks next time I would like that
