When I was living in Germany, I got totally hooked on "Gluhwein", which is their name for mulled wine; basically a medium-bodied red wine spiced and warmed up. Every year since, I've made a batch, with results ranging from decent to disastrous, LOL.
This year, however, my batch came out soooo good that I can't possibly think of how I can improve it. Therefore I consider my personal Gluhwein recipe 'perfected' (now I gotta get my pina colada cheesecake recipe 'just right' before the guests arrive next week!).
Anyway, both the ingredients and preparation method made a huge difference when it came to getting my Gluhwein recipe 'just right'. I offer it to you...
750ml bottle of medium-bodied red wine (Bordeaux or similar)
120ml (4 fl. oz.) Cognac or Brandy (doesn't need to be expensive stuff, but don't get rot-gut stuff, either)
16 fl. oz. Water
1/2 cup Sugar
3 Cinnamon Sticks
12 Whole Cloves
Peel of 1 Lemon
Peel of 1 Orange
1/4 teaspoon Nutmeg
1/8 teaspoon Allspice
1/8 teaspoon Pure Almond Extract
1) Bring water to a boil
2) Add sugar into saucepan, use wire whip to mix/dissolve it in
3) Combine everything else into saucepan EXCEPT wine and cognac/brandy
4) Boil uncovered 15 minutes, stirring occasionally
5) Strain and return to saucepan
6) Boil, stirring constantly with wire whip, reduce liquid (through evaporation) to approx. 2 fl. oz. of a syrup
7) Remove from heat, add a small amount of wine to syrup, stir together with wire whip
8) Combine wine/syrup, remaining wine, and cognac/brandy; stir together with wire whip
9) Heat to almost boiling, but DO NOT allow to boil
10) Keep/serve warm, serve with a cinnamon stick in each glass/mug
This is just incredible stuff. Tastes great and warms you up fast, right down to the bone.

Chow Mein Noodle Cookie
Ingredients-
3 cups butterscotch chips
1 (5 ounce) can chow mein noodles
1 cup peanuts
Preparation-
In a medium saucepan, melt butterscotch chips over low heat, stirring constantly. Stir in chow mein noodles and peanuts.
Drop by teaspoonfuls onto foil. Let stand until cool.

I really enjoy Stuffed Chicken Rolls. You basically take boneless skinless chicken breast, and pound them out to be very thin and flexible. Then you prepare boxed stuffing the way it's supposed to be made, only adding in one egg. You spread stuffing in a thin layer on the chicken breast, and then roll it up. Pour cream of chicken soup over the rolls, and add some paprika on the top for color. You can also add cranberries if you like. They give it a nice sweet tart flavor. Hope you enjoy.

Chicken Enchiladas
PREP TIME 30 Min
COOK TIME 1 Hr
READY IN 1 Hr 30 Min
Original recipe yield: 6 servings
INGREDIENTS
* 6 skinless, boneless chicken breast halves
* 1 tablespoon butter
* 1 cup chopped onion
* 1 green bell pepper, chopped
* 1 red bell pepper, chopped
* 2 cups shredded Cheddar cheese
* 1 (4 ounce) can diced green chile peppers
* 1 cup green salsa
* 1 cup chopped fresh cilantro
* 4 teaspoons ground cumin
* 2 chipotle peppers in adobo sauce, chopped
* salt and ground black pepper to taste
* 12 (7 inch) flour tortillas
* 10 ounces shredded Monterey Jack cheese
* 1 cup whipping cream
* 1/2 cup chicken broth
DIRECTIONS
1. Bring a pot of lightly salted water to a rapid boil over medium-high heat. Add the chicken to the boiling water; cover. Cook 15 to 20 minutes; drain and set aside.
2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 baking dish.
3. Melt the butter in a skillet over medium heat. Cook the onion, green bell pepper, and red bell pepper in the melted butter until just soft, 5 to 8 minutes; transfer to a large bowl. Add the chicken, Cheddar cheese, green chile peppers, salsa, cilantro, cumin, and chipotle peppers to the bowl. Season with salt and pepper; mix.
4. Place about 1/3 cup of the chicken mixture along the edge of a tortilla; roll tightly into a tube. Place the enchilada, seam-side down, into the prepared baking dish. Repeat until all the chicken mixture is used. Sprinkle Monterrey Jack cheese over the enchiladas. Whisk together the whipping cream and chicken broth in a small bowl; pour over the enchiladas. Cover the dish with aluminum foil.
5. Bake in preheated oven 30 minutes. Remove foil and continue baking until cheese is completely melted, about 10 minutes.

INGREDIENTS
* 2 (10 ounce) packages frozen chopped broccoli
* 8 ounces processed cheese food, shredded
* 1/4 pound butter
* 32 buttery round crackers, crushed
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place broccoli in casserole dish and cover with cheese.
3. In a large skillet over medium heat, melt the butter; add the cracker crumbs and stir until evenly coated. Sprinkle over cheese.
4. Bake for 30 minutes.

Sweet Potato Latkes
(Potato Cakes)
PREP TIME 15 Min
COOK TIME 10 Min
READY IN 25 Min
INGREDIENTS
* 2 sweet potatoes, peeled and shredded
* 2 eggs, lightly beaten
* 1 tablespoon brown sugar
* 2 tablespoons all-purpose flour
* 2 teaspoons ground cloves
* 2 teaspoons ground cinnamon
* 1/4 cup vegetable oil for frying
DIRECTIONS
1. Place sweet potatoes in a colander. Place a cheesecloth over the potatoes, and squeeze the potatoes to release as much liquid as possible. Let the potatoes sit to release more liquid, then squeeze again.
2. In a large bowl, combine sweet potatoes, eggs, brown sugar, flour, cloves and cinnamon; mix well.
3. Heat oil in large heavy skillet to 375 degrees F (190 degrees C).
4. Form mixture into pancake size cakes, and fry in hot oil. Flip cakes after 2 to 3 minutes (when bottom is browned) and brown other side. Drain on paper towels, and serve piping hot!

SNOWBALLS
1 cup butter, softened
2/3 cup powdered sugar
1-½ tsp. vanilla extract
2-¼ cups flour
¼ tsp. salt
1 cup walnuts, finely chopped
2 cups powdered sugar, for dusting after baking
Preheat oven to 400 degrees F. In large mixing bowl, cream butter & powdered sugar. Add vanilla extract & blend well. Stir in flour, salt & walnuts. Roll dough into 1” balls. Place 1” apart on ungreased cookie sheet. Bake 12 to 14 minutes, or until lightly browned around edges. Cool 2 to 4 minutes, then dust with about 1 cup powdered sugar. Cool completely, then dust again with powdered sugar.
Yield: 4 to 5 Dozen
COCONUT MACAROONS
2 egg whites (from large eggs)
½ tsp. vanilla
1 ash salt
2/3 cup granulated sugar
1 3-½-oz. can (1-1/3 cups) flaked coconut
Red and green candied cherries, cut in quarters
Preheat oven to 325 degrees F. Lightly grease cookie sheet & set aside. Beat egg whites, vanilla extract & salt until soft peaks form. Fold in coconut. Garnish the top of each macaroon with ¼ of a glazed cherry. Drop from a teaspoon onto prepared cookie sheet, 1-½” apart. Bake about 20 minutes. Cool completely on wire rack.
Yield: 2 Dozen Macaroons
SHORTBREAD
1 cup (½ lb.) butter, softened
½ cup sifted powdered sugar
2 cup all-purpose flour
Preheat oven to 325 degrees F. Lightly grease 9” square pan & set aside. In bowl cream butter & sugar until light & fluffy. Stir in flour & blend well. With your hands, gather up dough and press it evenly over bottom of prepared pan. Bake 40 to 50 minutes, or until pale golden brown. Transfer pan to wire rack & cut into small squares. Let cool in pan.
Yield: 25 Squares
ANISE DROP COOKIES
6 large eggs, separated
1 cup powdered sugar
1 cup flour
3 tsp. anise seed
Lightly grease cookie sheets & set aside. Beat yolks until thick & lemon-colored. Beat whites until stiff & combine the two mixtures. Gradually beat in sugar; mix lightly. Sift flour & add to mixture. Stir in anise seed. Drop from the tip of a spoon, about 1” apart, on prepared cookie sheets. Refrigerate overnight. Preheat oven to 300 degrees F. Bake for 12 minutes. Cool on wire racks.
Yield: 3 or 4 Dozen
