I enjoy simple baked sweet potatoes - like baked white. Either top with butter, salt and pepper or sometimes I add cinnamon/sugar.
Pierce the sweet potato like you would a white potato so the steam can escape rather than the potato bursting in the oven. I like to put the sweet potatoes in a pie pan rather than directly onto the oven rack, because they seep more moisture than a white potato.
I'm sure you'll enjoy sweet potatoes, whether you fix them plain or fancy!

Put them in the microwave whole for a few minutes then eat like a baked potato. Cut into sticks and deep fry them or put them on a greased cookie sheet in a 400F oven for sweet potato fries. Peel, cut into chunks and roast them in the oven with a little oil and maybe some other root vegetables. Peel, boil, mash them. Add some butter and milk or something else to make them creamy like mashed potatoes.
