I'm having xmas eve breakfast at my house. I need some ideas for the menu.

Sausage Breakfast Casserole

1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread

Place cooked sausage on the bottom of a greased 9" x 13" baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350º for 50 minutes or until light golden brown and set in center. Serves 8.

Sugar Pie's Blueberry-Stuffed French Toast Casserole

Nonstick cooking spray
9 eggs, beaten
2 cups milk
¼ cup melted butter
½ cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)

Preheat oven to 350ºF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.

In a smaller bowl combine eggs, milk, butter, and the ½ cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.

Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Gingerbread Pancakes with Lemon Sauce

2 Cups Bisquick baking mix
1 egg
1-1/3 cup milk
1/4 cup Molasses
1-1/2 teaspoon Ginger
1 teaspoon Cinnamon
1/2 teaspoon Cloves

Mix and cook on oiled griddle. Serve hot pancakes with cubed cream cheese and warm Lemon Sauce.

Lemon Sauce
1/2 Cup Butter (1 stick)(No substitutes)
1 Cup Sugar
1/4 Cup Water
1 egg, beaten
3 Tablespoons Lemon Juice

Mix, cook over low heat, stirring constantly, until smooth. Keep warm.

My daughter and I just closed a restaurant the day before Thanksgiving. Our breakfasts were outstanding. Start with a lovely Mimosa(champagne & orange juice) or just juice, Bacon, sausage or ham and eggs prepared to order. An omelet of some sort or fritatta(oven baked omelet) rosemary and garlic hash brown potatoes, and toast or english muffins and jam

We have a traditional family dish that is very easy to make that we have on Christmas morning. I guess it is equivalent to a casserole. Take either crescent roll or biscuit dough that you get in the rolls and put it at the bottom of a glass lasagna dish. Cut up frozen "microwavable" sausage and scatter that on the dough. Scramble eggs and poor them on top of the sausage and sprinkle the top with cheese. You can also make a lower fat version with turkey sausage, egg beaters, and low fat cheese.

just like the lumberjack slam at denny's except w/out pancakes, i hate pancakes.

All very easy to prepare and makes a wonderful breakfast

1. bacon or turkey bacon, sausage-patties or links, Canadian ham, strip steak, lox (bagel with cream cheese, lox), (lox being shaved salmon), sliced meats,
2. muffins, breads-white-rye- wheat- French bread- pumpernickel, (finger sandwiches), hard-onion- powder rolls- sweet rolls- bagels,
3. pancakes, waffles, French toast ( I use french bread or Texas toast), hash browns, fried potato with onions, French fries, cottage fries,
4. eggs-any kind, quiche, baked casseroles,
5. dried cereals, hot cereals Cream of Wheat-Cream of Rice, oatmeal, Mapo,
6. fruit- cheese- veggies- sliced meats plates, puddings, jell-o's.
7. condiments-salt,pepper, hot sauce, steak sauce, ketchup, mustard, horseradish spread, mayonaise or Cool Whip, butter or margine, brown sugar, sugar, crackers, chippies(chips-dips), cream cheese, cheese spreads(cheedar with wine), jams-jellies, peanut butter, organic honey, syrups, plenty of ice cubes,
8. wine-beer-spirits- liquor & fruit-punches, coffee, tea, milk, hot apple cider, fruit juices, pop, kool-aid,
9. crepes, petit-fours (small cake squares), bars, cookies, pies, chocolates, mints, nuts=desserts period yummy=yummo.
