i have to do research on white beans, but all i seem to find are sites with recipes. can u guys find any informational sites please?

Try Googling "Bean Board" or "Bean Promotion Board".... there's got to be soem state outfit set up to promote beans, legumes, and peas. That site shoudl have info on beans.
Oh, also check your local Cooperative Extension service for info.

Soy beans are white - and delicious. You could do lots of research on those since they make a million products from them.
