THIS IS SOOOO GOOD!!!
avacado bean dip
4 avacados diced
1 can corn drained
1 can black beans drained
1 tsp of jarred chopped jalepenos
1/4 cup cilanto chopped
1 Red Onion chopped
1/4 cup lime juice
mix all ingredients putting lime juice on avacado as soon as you dice it to keep it from getting brown
refridgerate for 2 hours prior to serving
eat with tortilla chips!!

this is really good, simple and can be made the night before and just grab and go.
PIG SALAD
20 oz frozen peas (not thawed or cooked)
1 C chpd celery
1 C cashews (whole is best but you can use pieces)
1/2 C chpd green onion, including tops
1/2 C cooked and crumbled bacon
3/4 C sour cream
3/4 C mayo (REAL)
Put the frozen uncooked peas in a large pretty dish. Add the celery,
nuts, onions and bacon. Mix the sour cream and mayo and toss with the
pea mixture. Cover and chill for several hours before serving. This will
keep a couple days in fridge.

These are great to make for entertaining.
4 servings
1 cup ricotta cheese
2 (11-inch) flour tortillas
1 tomato, thinly sliced
2 cups torn spinach leaves
1 cup thinly sliced red onion or to your taste
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 cup alfalfa sprouts
4 ounces sliced turkey breast
Spread cheese evenly over tortillas to within 1/4 inch of edges. Layer tomato, spinach, onion, oregano, basil alfalfa sprouts and turkey over 2/3 of each tortilla. Roll up and wrap in plastic wrap. Refrigerate 1 hour or overnight.
When ready to serve, unwrap and cut each log crosswise into 10 slices.
Crab Stuffed Deviled Eggs recipe
2 cups jumbo lump crab meat
1 cup mayonnaise
1/2 tablespoon Old Bay seasoning
1 teaspoon vinegar
1/2 tablespoon Worcestershire sauce
1/3 cup celery
Dash of garlic powder
Dash of Tabasco sauce
12 large eggs
Boil the eggs in a pot of water. When done, drain off water, peel and cut eggs on a tray. Using a large mixing bowl, add vinegar, then crab meat and remaining ingredients in order. Sprinkle garlic powder to taste, and add a dash of Tabasco sauce. Throw in the egg yolks and mix all together. Place mix in the center of egg. Sprinkle with parsley, chill and serve.
Makes 8 servings.

This is an amazing soup recipe that takes about 15 min to make and everyone always loves it! You would need some kind of a crock pot to keep it hot tho.
Taco Soup
1 lb hamburger
1 med onion, chopped
1-15 oz can black beans
2-15 oz cans pinto beans
2-14 oz cans diced tomatoes w/green chilies - undrained
1-15 oz can creamed corn
1 pkg taco seasoning
3 cps water
Toppings
Broken tortilla chips
Shredded cheddar cheese
Sour cream
In a large kettle, brown hamburger and onion in oil. Drain excess oil.
Rinse the pinto beans, and black beans with water in a colander. Add them to the pot. Stir in the diced tomatoes, creamed corn, water, and taco seasonings. Bring to a boil and simmer for 20-30 min. Ladle into bowls and top with broken tortilla chips, cheddar cheese and sour cream.

Chocolate Chip Cheese Ball
1- 8 oz. cream cheese, softened
1 stick butter, softened
1/2 cup chopped pecans, finely chopped
2 Tbsp. light brown sugar
3/4 cup powdered sugar
1 tsp. vanilla
3/4 cup mini semisweet chocolate chips
Combine all ingredients (except choc. chips) in a bowl, much like you would a cookie dough. Refrigerate for at least half an hour. Take out mixture, form into a ball, then roll it in the choc. chips. Refrigerate again until ready to serve. Serve with graham crackers, vanilla wafers, or shortbread cookies.

Baked Ziti:
A jar of your favorite pasta sauce
a box of ziti or rigatoni cooked
big container of ricotta cheese,next size up from 15 oz
1 pound of shredded mozzarella cheese
mix all ing. together and bake at 350 in a foil pan covered with foil until bubbly.You can top it with more cheese and bake until browned but that`s just a suggestion.Hope I helped and have a Merry Christmas:o)
