One of the cookies I like to make around Christmas time are chocolate chip cookies.What I do to make them look Chritsmassy is after thy1re done and cooled I dip them in melted chocolate and the sprinkle them with red& green sprinkles.Let them dry on some foil.You can also add nuts to them.but they are fine without them.A tip for adding nuts to a recipe is toasting them to bring out the flavor.To do this,all you do is saute them in a hot dry pan until you smell an aroma of nuts.Not too long or they`ll burn,and stir them constantly.Now here`s a recipe for the best chocolate chip cookies you`ll ever eat!
Ingredients:2-1/4 cups all purpose flour
1 tsp.baking soda
1 tsp.salt
2 sticks margerine,softened
3/4c.granulated sugar
3/4 cups packed brown sugar
1 Tablespoon vanilla extract
whole package of chocolate chips
Directions:
Preheat oven to 375.Beat margerine,sugars,and vanilla until light and fluffy,scraping down sides of bowl often.This process takes several minutes,but it`s very importantbecause you want to incorperate air into the margerine mixture because this will result in a melt in your mouth cookie.Next,add all the dry ingriendiens except chocolate chips.Mix just until blended.You do not want to overmix after the flour is aded because the gluten will devlope and that makes one tough cookie!Stir chocolate chips in by hand.Drop by 1/2 tablespoon onto ungreased cookie sheet.Leave room between cookies as they will expland when they bake.Bake 8 minutes.Don`t worry if they look undercooked.They continue to cook after they come out of the oven.Let them cool completely before removing them from pan.
**Note:If you notice there are no eggs in this recipe.It is not a mistake.Just so you know:o)Also it is important to only bake one tray at a time,because baking more than one tray alters the temp.of the oven.Also,make sue the oven rack in in the center of the oven.If you follow theses directins I can guarentee you will have the best cookies you ever tasted!Merry Christmas:o)

Christmas Ginger Snaps

1/2 cup shortening
1 cup sugar
1 egg
1/3 cup molasses
2 cups flour
2 teaspoons baking soda
2 teaspoons ginger
1 teaspoon cinnamon

Preheat oven to 350 degrees. Put shortening and sugar in a large bowl. Beat well. Add eggs and molasses and beat until light. Stir flour, baking soda, ginger and cinnamon. Roll pieces of dough into small balls. Place into a greased cookie sheet. Sprinkle the tops with a little white sugar. Bake 12-14 minutes. Let cool and enjoy!

I love baking cookies, especially at Christmas, and I always try to make at least one new recipe. Here's one I found a few years ago. It's very different but a lovely cookie for dunking in hot chocolate, coffee or milk.

It's an icebox cookie which means that you mix up the batter, then roll it in a log and put it in the fridge or freezer. Then you use it like a slice and bake cookie!

****COOKIES MADE FROM A CAKE MIX


1 (18.25 ounce) box cake mix
2 eggs
1/2 cup vegetable oil
Preheat the oven to 350 degrees.
Mix only the above ingredients in a large bowl until blended. Drop the batter by spoonfuls onto an ungreased cookie sheet about 2 inches apart. Bake for 8 to 10 minutes.
Cool.

BUTTERSCOTCH COCONUT COOKIES Yield: 4 dozen cookies 1 1/3 cups all purpose flour ½ tsp baking powder ½ tsp baking soda ½ cup unsalted butter, at room temperature ½ cup granulated sugar ½ cup firmly packed brown sugar 1 large egg ½ tsp vanilla extract 1 ¾ cups sweetened shredded dried coconut 1 ½ cups butterscotch chips Preheat the oven to 325 degrees. Have ready 2 baking sheets lined with parchment paper. Sift the flour, baking powder, baking soda, and salt together onto a sheet of waxed paper; set aside. In a large bowl, using an electric mixer on high speed, cream the butter until fluffy and pale yellow. Add the granulated and brown sugars and continue beating until the mixture is no longer gritty when rubbed between your finger and thumb. Add the egg and vanilla and beat on low speed until blended, occasionally stopping the mixer and scraping down the sides of the bowl with a rubber spatula as needed. Add the flour mixture to the butter mixture and mix on low speed or stir with a wooden spoon just until blended. Add the coconut and butterscotch chips, mixing or stirring just until blended. With dampened hands, shape the dough into 1-inch balls or drop by rounded tablespoons onto the prepared baking sheets, spacing the cookies about 2 inches apart. Bake the cookies until golden brown around the edges, about 15 minutes. Let the cookies cool briefly on the pans on wire racks before transferring them to the racks to cool completely.

GINGERBREAD COOKIES

1 pkg. spice cake mix
2 tsp ground ginger
2 lg eggs
1/3 C Crisco Oil
1/3 C Dark Molasses
1/2 C all-purpose flour
Dark raisins (optional)

Combine all ingredients except raisins in large bowl; mix well. Refrigerate 2 hours. Roll dough to 1/4 in. thickness on lightly floured surface. Cut into desired shapes, decorate with raisins if desired.

PS - if you don't have cookie cutters on hand, the open end of a drinking glass will work!

Let me give you a yummy one...Your basic chocolate chip recipe, add 1/3 cup cocoa powder, add the chunk chips instead of the regular ones. If you want to kick it up more take 4 or 5 candy canes crush them fine, add them..Do not over bake them
