Actually the bible says "some" wise men. Just looked it up, 10 minutes ago in four different translations but enough splitting hairs...(Matt. 2:1)
Myrrh is used during burial and was given as the symbol of sacrifice that He (Jesus) would make.
Gold was given because Jesus is the King of Kings. Frankincense because He (Jesus) is the Priest above all Priests.
