You can't. But if anyone tries to use it, it will bounce as he's listed by Social Security as deceased. In fact, the listings of deceased persons in the SSA database is public information and is publicly searchable. I checked out my Dad's a while ago and it was there.

You can notify both Social Security and the credit bureaus that your father is deceased (send them a copy of the death certificate). Request that the credit bureaus "lock" his SSN.

Why does it matter? Social Security gets copies of death certificates and unless you dad died real recently, they know. Anybody who tries to use the number is going to have hard time proving they are alive.

run a credit check and if anything is open, send a copy of the ss card and death cert to any newly opened credit agencys. this should put a stop to any fraudulent charges. (i work in billing)
