Ok, here's the problem. I'm trying to type up an essay, but it needs to be double-spaced. I don't know how to double-space with 2007 though. I've never used it before.

everything is in the word help files

open word help and type in demo
have a look at the demo to get a gist of what is available, then you can look at them properly when the time comes to use the feature.

Another search you can do is tuturiol but these take a long time to do.

You can try the commands used in previous versions:
click Format
cl Paragraph
look for spacing - click the down arrow - select double

You might also want to invest in a book. I buy lots of used books from Amazon. All I have are in excellent condition.

Go to paragraph at the top. Then change line spacing from single to double
