If you don`t feel comfortable having a big pot of soup or chili sit in your fridge all week what you can also try is making a huge pot of stew,chili,soup,whatever and freezing it in small containers or even zipper bags,that way it will stay fresher for you.Also bagged salads,yogurts,canned soups or canned fruits packed in juice not syrup would be great additions to your lunch.Tuna made with very little mayo,or hard boiled eggs are good.Baby carrots and other raw veggies are good.Low-fat presliced sandwich meat is good too.I hope I was of help to you!Merry Christmas:o)

On Sunday afternoon I always make a big casserole and eat it all week for lunch. They're easy, just throw a bunch of stuff in a pan and bake it so you could do it while you're studying some night.
When I was in college I took salad for lunch every day. I'd cut all the veggies up over the weekend and stick them in baggies. Then on Sunday night I'd put together a salad for Monday, Monday night I did it for Tuesday, etc. That was quick. Sandwiches aren't all that appealing, but they can be made quickly (and cheaply) in the morning before you leave.

You can buy cloth plastic lined lunch bags with a zipper bottom. The bottom holds one large plastic ice cube. I use to keep two large plastic ice cubes, one for taking to work and the other in the freezer so I would always have at least one large frozen ice cube for the lunch bag.
I also had a wide mouth Thermos for hot soups, stews, gumbos, and hot drinks.
Look for a nice looking lunch bag to carry everything at once. There are all types on the market. Look at places such as WalMart.
Our WalMart makes large salads for employees. They come in covered plastic containers and include a fork and packaged dressings. I like the 7 layered salad best. Buy a couple of these each week and keep in your fridge to take with you. Or make your own.
Hillshire Deli has shaved meats in plastic containers. You can make several sandwiches out of one container. These meats are delicious and there are all types such as ham, roast beef, and etc.
Cold chicken is always good.

I make chicken enchiladas...my recipe makes 24...they are easy to freeze and reheat...
Cooked chicken (I buy a rotisserie and use all of the meat) Season with Lowrey’s
Corn Tortillas 24
1 1/2 lbs. Sharp cheddar cheese grated
Onions 2 cups chopped
Sauce
Enchilada Sauce- 2 cans
Rotel Tomatoes and Chilis- 1 can
Tomato soup- 1 can
Cream of Chicken soup- 1 can
Mix ingredients to make sauce. In separate large bowl, mix chicken, onions, 1/2 of the cheese and 1/2 of the sauce. Heat vegetable oil in pan and dip tortillas until warmed. Dab on paper towel and then put tortilla in baking dish, add some of mixture and roll (caution-hot on fingers). You will make approximately 24 enchiladas. Pour remaining sauce over the enchiladas and top with remaining cheese. Bake at 400 for 30 to 40 minutes.

I usually fry up a bunch of chicken,it freezes well too. Or you could make up some hamburger helper,tuna salad,chicken salad,or something like that. all those things freeze really well and you can label the containers so that you'll know when you cooked them and what they are.
You can also fix hamburger patties and freeze them! I fix thngs like this for my b/f all the time and the kids too!
