I need a recipe for flan for a person who is diabetic. My father just found out that he has diabetes and he is really bummed because I always make flan for Christmas, it is his favorite dessert, but now he's all sad because he's not supposed to be eating stuff like that. I'm looking for a recipe that I can make for him, because he's already bummed about the diabetes and I know it would kind of cheer him up if he had something that he was used to.

SPLENDA CAN BE USED IN ANY RECIPE THAT CALLS FOR SUGAR. ONE WORD OF CAUTION THOUGH. BE CAREFUL OF THE 'BAKING BLENDS' THAT SPLENDA MAKES. THEY ARE HALF SUGAR AND HALF SPLENDA.
AS A DIABETIC, AS LONG AS YOUR FATHER FOLLOWS THE GENERAL GUIDELINES, HE SHOULD BE ABLE TO HAVE A SMALL PORTION OF THE FLAN. I HAVE ALWAYS BEEN TOLD THAT IN MODERATION, YOU CAN HAVE AN OCCASIONAL TREAT. THINGS TO KEEP IN MIND IS HE SHOULD CHECK HIS BLOOD SUGAR AND MAKE ANY ADJUSTMENTS TO HIS MEDICATIONS, OR IF HIS SUGAR IS HIGH, MAYBE IT IS BEST TO SAVE THE FLAN FOR ANOTHER DAY.
I HAVE BAKED WITH SPLENDA FOR A LONG TIME AND USUALLY, YOU CAN'T TELL IT IS SUGAR FREE.

There are several artificial sugars, that you can cook with. Splenda is one that you can use, and I have baked with it. It comes out very good. close to the original.
