Are you going to be serving the CC atop a bed of pasta??? If so, you don't need too much more other than a green leafy salad made with baby lettuce (a mix) with a simple vinaigrette and some good crusty bread..........
On the other hand, if you're doing the CC solo, you might want a salad and some gnocci (Italian potato dumplings, ready made is available in the grocery) sauteed in some butter, olive oil, garlic and a bit of salt and pepper.....Enjoy!!!!

I usually serve mashed potatoes or sauteed asparagus with my chicken cacciatore. It all depends on if I am looking for comfort food or a lighter dinner. However, a pasta side would be just fine since you would be sticking with the Italian theme. Definitely don't forget the crusty bread to mop up all the sauce! A spinach salad might be good too to start things off.

BROCCOLI AND RICE CASSEROLE
2 (10 oz.) boxed chopped broccoli, defrosted
2 cans cream of mushroom soup
1/2 c. butter
1 large onion, chopped
1 sm. jar Cheez Whiz (regular or Mexican)
2 c. Minute Rice
Chicken, cooked and deboned (optional)
Saute onion in butter. Add soup and Cheez Whiz. After Cheez is melted add rice and defrosted broccoli. Put in buttered 2 1/2 quart casserole dish. Bake at 375 degrees for 15 to 20 minutes or microwave until hot.

Just keep it simple and serve it over some pasta. You could also do a roasted veg, or squash pasta (thinly julienned squash sauteed in butter). Good luck.

Is dependent on the context really. Which is better as a snack - fresh fruit for me personally. It's tastier and gives you that little bit of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables

CHUNKY CHICKEN CACCIATORE
Combine the following to coat chicken:
1/2 c. flour
1/2 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. paprika
1 chicken, cut in serving pieces, dredged in flour mixture
1/4 - 1/3 c. olive oil
2 medium yellow onions, sliced or chopped
1 green pepper, sliced or chopped
4-5 cloves garlic, sliced or crushed
2-3 medium tomatoes, chopped
2-3 celery ribs, sliced
2 8 oz. cans tomato sauce
1/2 tsp. oregano
1/4 tsp. pepper
1/2 tsp. garlic salt
1/2 tsp. salt
After chicken is coated with the flour mixture, brown in hot oil and add the remaining ingredients. Simmer together until the chicken is done.
If needed, use the left-over flour mixture to thicken the sauce.
Serve over hot cooked spaghetti or fettucine, with salad and garlic bread.
For a variation you can cut the chicken into bite sized pieces before you start
