No. They may keep an eye on you. But if you keep your bets equal, they can't say you're counting.
If you're winning a lot, they may try to distract you so you start making bad decisions. They may send the cocktail waitresses over more often, for instance.
At the very least, they'll do what they can to encourage you to stay at the table longer. In blackjack, time is the enemy of the player. The longer you play, the more likely you are to lose.

Depends how much you win, how regularly, and how your behavior is. If you're counting i would expect you to start to win more and more often the longer you are sitting at the table, despite your odds of winning (with no counting) being the same as earlier hands.
Most casinos in vegas, at least, use 6 decks now which doesn't eliminate counting but DOES make it quite quite difficult. I doubt that playing by your strategy will trigger a 'counting' alert for the casino, since even playing a 'perfect' game of blackjack (statistically perfect) you will still lose to bad luck.

With the automatic shuffler and the use of 6 decks at our local casino, I'd find card counting futile. I do the strategy thing for the most part although I hate hitting 3 against a 12, splitting 8's against a face, doubling 11 against a face and hitting 16 against a 7. With the last two that I mentioned I do it all of the time but the 8's and 3 situation, I sometimes balk at but usually do what I'm supposed to do.
I find the best strategies for Black Jack are not to panic bet, plan on losing before you go and set a limit, don't chase lost money with more money and don't play if you're distracted or tired. I believe playing with a progressive betting style is key, but keeping in mind that despite that the odds are more like a coin flip and you can go on good streaks, it wouldn't be against logic to think that you could lose every hand for the rest of your life. All strategy is great, but if the cards aren't working with you, it doesn't matter.
Forgot to answer the question. (-: They do not assume that you are counting, but they watch careful to how you're betting and acting. I think they're careful to look for cheating, but they don't believe you are.

Winning occasionally is expected.
Win consistently, and you'll get a second look from security, who'll then look for things you're doing that indicate you're counting.
For example, if you're following the strategy most of the time, but the times you deviate from it are more to your advantage because of the count, that'l get their attention.
Or, if you vary your betting patters in line with the count, that's a big red flag.
Remember, Security can rewind the tape, start counting the deck themselves, and figure out if you're counting or just erratic and playing hunches.
If you want to throw them off, split tens for one hand early in your session.

It depends on your behavior. They know how to count, and if you are increasing your bet when the count is favorable, and decreasing it when the count is against you, that's one red flag. Another red flag is making non-basic strategy decisions based on the count, such as standing on a 16 against a dealer 10. There are other flags too, but they don't assume you are counting.
If you are playing low stakes, they probably won't bother you anyway.

No. As other said, varying your bet is one of the tips you are counting but I found the biggest give-away that you are counting cards is the insurance bet. Most players always go one way or the other. If you bet or not bet insurance according to the count then it is easy to spot you (but is also the smartest thing to do).
