That's ridiculous. They only assume you were cheating if they observed something irregular, like seeing you cheat.
Also the laws are such that by the time they pull you aside and ask you about it, they've got video tape of you doing it. Casinos do not interrogate. If they did they would be exposing themselves to a huge law suit. Casino security will observe, collect and document evidence. Then they will detain you only until local law enforcement can get there and then the police officer will place you under arrest. The arresting police officer will then decide whether or not you will be taken into custody or released under your own recognizance.
Now I must admit that I have heard of casino managers conducting initial interrogation with employees that have been caught doing something improper. However you must realize that a casino employee has no legal standing outside of any ordinary citizen to detain you and of course have no right to ask you any questions. They also have no legal obligation to provide you with a lawyer, so if you were to ask for a lawyer and they kept questioning you without providing one, it is a gray area as to whether or not it would be admissable. However if they questioned you for any length of time BEFORE calling the local authorities, you would have a valid case of false imprisonment whether or not you were found guilty of the offense they were holding you for.
One last thing, whether or not someone is winning is not really what tips us off when we notice someone doing something improper. We are looking for irregular betting patterns or evidence of collusion. A good percentage of the people that are caught cheating the casino were actually losing at the time they were caught. This is especially true in poker rooms. Sometimes they are so god awful bad at it, we have debated which would be the worse punishment. Picking them up and having them arrested or letting them continue to play. (We have debated it, but security is always called and they are not known for their senses of humor)

Only if you're acting suspicious. If you've won many times there in a few days, etc. Otherwise they'll just check the cameras to make sure it's a legit win (unless it's real small) and then give you the winnings.

The presumption is that you won fair and square. But they have the right to review the tapes of the game to see if they can prove otherwise.
This isn't like the old days, when the mafia ran the casinos and did what they felt like.

No, they do not assume you have cheated. They want you to continue to play because they generally have and edge on you and the more you play, the more they win.
