The police issue a form Gen 164 (previously called a HO/RT1) and commonly called a producer. If you are asked to produce documents you have seven days from midnight on the day you were stopped.
Just as a side note we now have access to the DVLA database, therefore can check what licence if any a person holds. We can also access the insurance database to find out if the vehicle is insured and who are named drivers on the policy. MOT is also available on a PNC check. As a result the occasions for issuing producers is now much less.

In the UK you have to produce your driving documents within seven days if driving a car, the law is different for LGV's and PCV's.
It's a little known fact that a verbal request to produce your documents is enough, you don't have to be issued with a form HO/RT/1 (producer), that is merely and aid memoire detailing the documents to be produced.

Many department use "fix it tickets", or "Five day repair" notices for equipment violations. These are usually for broken headlights, loud exhaust, or other violations that need to be checked in person.
If the paperwork tells you to bring proof to the PD, I would suggest you do it.

the car mot can be checked through dvla data base before they stop you through the reg
the car insurance can be checked through the data base before you are stopped
once they have your name assuming you are you they can check their own computor to make sure you have a licence
and if they do make you produce it 7 days.
