were cooking for mine and hubby parents on boxing day a full 3 course meal. What can we make. There will be six of us. Can you give me some ideas and recipes please. No ham, gammon or pork. Im pregnant so also no foods that pregnant women cant eat or an alternative for me

Huge meal is overkill!

salmon - wth new spuds, green beans and a nice delicate hollandaise sauce.

Fresh fruit for after??

Save the left overers for a day!!

Will you all really want a 3 course meal after the excitement of Xmas day? Why not have a xmas leftovers buffet? Turkey sarnies with cranberry sauce and salad, smoked salmon & scrambled eggs etc? Would be much less stressful.

Assuming you will have turkey for Christmas, how about a nice light supper for Boxing day. I would suggest salmon steaks, rice with veggies in it and a salad. You can buy Captain Highliner salmon that is frozen and fast to prepare and also delicious and make Rice a roni. Salads are pre done now so it will be a stress free meal for you to prepare. A nice fruit salad for dessert. Merry Christmas!
