for your ham try putting little cuts into the meat put fresh garlic and onion in it for flavor then pour maple or pancake syrup over it with some soya sauce as well when done cooking you will find it makes a nice brown color gravy which is awesome
as for your pork loin I would spice it up with your spices you like add some sliced onion to it wrap in foil and put in pan with a bit of water and bake at 325 degrees about 45 mins per lb

Can't help you with the gravy but here's a fabulous and easy way to cook a pork loin :
marinade in soy sauce, garlic, salt, pepper and rosemary
cook uncovered at 375 until done (depends on size)

Pork chops with spanish rice. If you use a spanish rice - like Rice-A-Roni Spanish rice, it is fast and easy. In a frying pan, sear the chops then put them in a baking pan and add the entire box of rice and seasonings. Stir together 2 cups of water, 15 ounce can tomato sauce, and 1 can of diced tomatoes. Pour over meat-rice and stir liquid together with rice and seasonings. Put in oven and cook on 325 degrees for 45 - 55 minutes. Stir and check on it after 30 minutes of baking. If too dry, you may need to mix in just a little more water.
