like how long should you wait before you assume you aren't hired... I'm a student and have applied to a lot of jobs. Should I write them all off after a certain amount of time?

For a regular job (that doesn't require a lot of background checks), if you haven't heard back in a week, your chances are less than 50-50 that they are interested, and if you haven't heard back in two weeks, it is almost certain they are not interested. It is difficult to call a number of applicants and tell them their qualities do not match the requirements of the job, so H/R managers avoid it.

Applying to 68 jobs is nothing. A degree and volunteer/internship experience alone do not qualify you for a job. You will not hear back from the majority of the places you apply to simply because it would be too time consuming for the employer to contact every rejected applicant. It's entirely unrealistic to think that you will be able to find a job easily in this economy. Employers as a whole are only looking for the most ideal job candidate. They do not need to settle on anyone. Professional work experience is what the employer is looking for. A base salary of 30k without experience will land your application in the reject pile regardless of your qualifications. You will lose out on many opportunities if you set your expectations too high.

If the jobs you applied for are office jobs, wait about 2 weeks and then mail a hand written thank you note.

If the jobs are service / fast food type jobs then a call back after 1 month should suffice.

It depends if they say when you fill out the app. You need to ask.
If they didn't say, I'd wait three days and then call to find out how long you should wait.
Say something like "Hello, my name is XXX. I filled out an application three days ago. I am just calling to speak to someone and find out when a decision will be made on that position." Then once you speak to whomever that is, ask them when they expect to make a decision.

... you should definitely follow up. Companies receive numerous applications on a daily bases. Just call and ask to speak to a manager and tell them you turned in an application and would like to interview. Oh and go on craigslist because they always have great jobs on there.
