Why did God create all those souls then send them off to oblivion? Was he still mastering his clay working skills as he worked his way up to Homo sapiens?

I suppose they just had souls like animals. We have spirits as well as souls. When God put spirits into men would be the 'Adam and Eve' moment I suppose.
Some christians are creationists, probably because it is a lot of effort to find out about evolution, and you have athiests like Dawkins trying to control ideas in that area, and imply it means God doesn't exist. Some people just are not terribly interested in such areas of Science. To not believe in some form of guided evolutionary development makes a small number of passages in the bible and some reasoning simpler, e.g there are prophecies, of the non-lucid type, about Jesus, in the Genesis creation account.

He didn't. He created Man in his modern form (albeit more perfect, and more giant).
Atheists cannot explain finds like "Guadalupe Woman". Here is a modern female skeleton embedded in solid, supposedly "225 million year old" rock. So you can only come to two conclusions:
1) Modern humans are 225 million years old.
2) The rocks are not "millions of years old".
My bet is on #2.

"Hominid, homo sapien" are names made up by man. There are many different types of apes, what we chose to call them does not prove anything more than man is creative.
