If I freeze, say, cookies, will they taste weird when I thaw them? I want to know because I'm making baked goods for people as Xmas gifts, and I want to make them and freeze them. Thanks for help.

Bake it, then put it on a air sealed plastic wrapper, or one of the glad press n seal wraps, so the freezers cold air moisture go in the cookies, especially when you make crunchy cookies makes it soft, so yes please, do it for culinary sake. good luck

They will be fine as long as you realized they won't freeze forever. When freezing baked goods, remember that commercial baked goods last longer, across the board, than home-baked ones. Commercially prepared frosted cakes and baked cookies, for example, last 8 to 12 months; home-baked cakes and cookies, only 3 months. Similarly, commercial yeast breads keep 3 to 6 months; home-baked breads, 3 months.

I would also suggest using freezer paper (local supermarket) along with the freezer bag.
