Chicken Cordon Bleu!
INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

how about a chicken casserole? if you are using cooked chicken, all you need to do is pull it apart. To make this recipe easier, I used canned chicken.....
16 oz bag of herbed stuffing
1 can cream of chicken soup
1 can cream of mushroom soup
1 can cream of celery soup
2 cans canned chicken - probably equals about 4 cups cooked chicken
1 stick butter, melted
1 c. chicken broth
I take the bag of stuffing and pour it into a large bowl and then pour butter over stuffing and mix really well. I take some of the stuffing and press it into a 13 x 9 baking pan. I drain the water out of the canned chicken into a measuring cup and then add water if it is less than one cup. I pour this into a saucepan and then empty all the soup into the same pan. I stir everything together and then bring to a boil. I sprinkle the chicken all over the stuffing and then when the soup is done, I pour half over the chicken. I take some more stuffing and cover the soup layer and then pour the over half over the stuffing and then I top with the remaining stuffing. Bake at 350 degrees for about an hour.

Start with one whole chicken cut up into pieces (I have also used leg quarters). Put the pieces in a baking dish that has been sprayed with cooking oil.
Mix together 8 ounces Apricot Preserves, 8 ounces Russian or French Salad Dressing, and one packet of dry Onion Soup Mix.
Pour this mixture over the chicken pieces.
Bake uncovered at 350 degrees for about 45 - 60 minutes.
Wonderful.

This is something my mother-in-law came up with that I improved on a bit by adding veggies....
Boil a pot of water and cook some pasta (best is spirals), I use a whole box.
Cut chicken breast into strips or chunks and brown. Add 1 chopped green bell pepper, 1/2 onion chopped, and about a 1/2 cup of sliced button mushrooms. Season with salt, pepper, oregano, basil and parsley. Cook until peppers are tender. Then add 2 cans diced tomatoes (drained slightly) and 1 can tomato paste.
Once boiling, add cooked pasta, mix together and simmer for about two minutes.
Serve with garlic bread/toast.
It sounds like a lot of ingredients, but its really easy and it turns out yummy. You can also substitute tortellini for the pasta, and sometimes I chop up some zucchini and put that in as well.

Dredge chicken breast in flour and saute it.
Romove it from the pan and keep it warm.
Chop up some Onion, garlic, and mushrooms, and dredge those in flour, saute them in the same pan that you used for the chicken.
Add some milk, or cream and let it thicken, thats what the flour was for.
ad the chicken back into the pan, and let it get hot.
serve the chicken with the sauce.
You can use anything else instead of the mushrooms too, i like spinach, or curry powder.

I like taking boneless chicken breast and flatten it and put ham and cheese in middle and roll it and secure with toothpick. Put it in baking dish with oil on bottom. You can put some butter in middle of chicken so doesn't get dry.
Or just marinade chicken with ITALIAN dressing and then you can bake in oven or do it on the grill!!! YUMMY!!!!

The Chicken and Parmesan Cheese
Ingredients:
1 (3 lb) broiler-fryer chickens (cut up any pieces)
1 teaspoon salt
1 garlic clove, cut in half (might need two depending on chicken size)
1/3 cup butter, melted or margarine
1 1/4 cups parmesan cheese, grated
1/4 teaspoon ground pepper
1/4 teaspoon thyme (fresh or dried)
1/4 teaspoon paprika (Hungarian preferred)
Directions:
1.Heat oven to 400 degrees. Grease baking pan, should be at least 13x9x2.
2.Melt butter. Mix together all dry ingredients.
3.Glide each half of garlic clove over chicken parts until covered. Throw garlic away.
4.Dip chicken into butter, then coat with cheese mixture.
5.Arrange chicken skin side down in pan. Pour remaining butter on top of chicken. Bake uncovered 30 minutes.
6.Turn chicken; bake uncovered 20 minutes (or until done, 160 degrees internally.).
7.Serve with asparagus and potato salad.

Chicken Cordon Bleu Burgers
Ingredients:
2 teaspoons vegetable oil or olive oil, plus more for drizzling
4 slices Canadian bacon
2 lbs ground chicken
2 teaspoons sweet paprika
2 teaspoons poultry seasoning
2 teaspoons garlic steak seasoning (Montreal Steak Seasoning) or salt and pepper
1 shallot, finely chopped
4 slices swiss cheese
2/3 cup mayonnaise
3 tablespoons Dijon mustard
2 tablespoons fresh tarragon, 4 sprigs chopped
4 kaiser rolls or English muffins, sour dough, split and toasted
8 leaves leaves lettuce
1 tomato, vine ripe, thinly sliced
Directions:
1.Preheat grill pan, nonstick griddle, large nonstick skillet or table top electric grill to medium high heat.
2.Add 2 tablespoons of oil and Canadian bacon. Warm bacon and caramelize it at edges, 1 to 2 minutes on each side. Remove to a piece of foil. Fold foil over loosely to keep warm.
3.Pour olive oil on plate. Finely chop shallot (not too much shallot or too big, or the burgers will fall apart).
4.Combine chicken, paprika, poultry seasoning, grill seasoning, shallot.
5.Score meat with the side of your hand to separate into 4 equal amounts. Make 4 large patties, 3/4 to 1 inch thick. Drop each patty onto the plate you poured olive oil on and coat with oil and place on hot grill pan, griddle or in skillet. Cook 5 minutes on each side, until chicken is cooked through.
6.Top patties with reserved cooked Canadian bacon and Swiss cheese. Fold each slice of cheese in half to fit the burger. Cover loosely with tin foil. Turn off pan and let cheese melt, 2 minutes.
7.Combine mayonnaise (or reduced fat mayonnaise, eyeball it), mustard, tarragon. Slather bun tops or English tops with sauce. Place Cordon Bleu burgers on bun bottoms and top with lettuce and tomato. Put bun or muffin tops in place. Serve with fries.

Crunchy Chicken Dippers
Ingredients:
2 eggs
2 lbs boneless skinless chicken breasts, cut into 1-inch wide strips
4 1/2 cups Honey Bunches of Oats cereal, finely crushed
1 cup barbecue sauce
Directions:
1.Preheat oven to 375°F
2.Beat eggs lightly in shallow dish or pie plate.
3.Dip chicken in eggs, turning over to evenly coat both sides of each strip.
4.Coat chicken evenly with cereal. Place in two 15x10x1-inch baking pans sprayed with cooking spray.
5.Bake 25 minute or until chicken is cooked through.
6.Serve with the barbecue sauce.
