By lean you mean less than 10% of fat right? If its very lean, the meat would be dry and saggy. A little fat can go a long way of moisture. Meatballs is definetly kid friednly, easy and nutritious, heck! the kids can even do their own meatballs.
just put
preheat 400 for 20 minutes
1 ground beaf
1 whole egg
dash of salt, pepper, paprika, chile powder, garlic powder.
a handful of parmasan cheese and cornmeal.

Taco Soup...Delicious! - 1 pound ground beef - 1 onion medium sized and chopped - 1 can black beans - 1 can pinto beans - 1 can shoepeg corn - 1 can diced tomotoes - 1 can diced tomatoes with green chiles - 1 package dry ranch mix - 1 package taco seasoning Mexican blend shredded cheese sour cream Brown the ground beef in a skillet with the chopped onion until no longer pink. Drain off any excess fat and add in both the ranch mix and the taco seasoning. Mix to combine the seasonings thoroughly with the ground beef. Transfer the meat to a large saucepan. Add in both kinds of beans, the corn, both kinds of tomatoes and the tomato juice. Stir to combine and heat through on medium heat. Reduce heat and simmer for 15 minutes. Garnish each bowl with shredded cheese and a dollup of sour cream.

Easy Hamburger and Veggie Soup
(this is a favorite of my very picky kids)
1# HB
1 medium onion (chopped as finely a you need to, to fake out your kids;)
1/4 tsp garlic powder
1 can cream of (your choice, I use mushroom) soup
1 (46 oz) can V-8 type of vegetable juice
1# bag of frozen mixed veggies
Brown and drain meat, Combine all ingredients and simmer 45 minutes. Makes about a gallon of soup.
That's the official recipe, I also either add a second smaller can of V-8 or a partially can of water and throw in a handful or so of elbow macaroni. (good way to make it go farther)
My kids eat this up, there is never any leftovers!!!

Halloween Hash
1 lb browned, drained ground beef
1 - 2 cans (depending on how much you want) whole kernel corn
1 - 2 cans kidney beans.
Drain the hamburger and put it back in the skillet. Add the kidney beans. DO NOT drain the kidney beans. DO DRAIN the corn. Then add the drained corn to the mixture. Season with a little salt and pepper and heat til warm throughout.

How about hobo beans? Cook meat (with or without onions), add 2 cans of pork n beans, 1 can of kidney beans, 1 big spoon of keptchup, 2.5 big spoons of mustard, 1 big spoon of apple cider vinegar, 3/4 cup of brown sugar, salt and pepper. Bake it for an hour (if onions are added ) @ 350, if no onions, just half hour til it bubbles. Very tasty and easy> go great with potatoes.

Sugar Pie's Deep Dish Taco Squares
2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
¼ cup green and/or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese
Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce, salsa or picante sauce, and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.
** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

BARBECUE MEATBALLS
1 lb. hamburger
1 sm onion
1/2 c. bread crumbs
1 egg
2 tbsp. oil
3/4 tsp. salt
1/4 tsp. pepper
3/4 c. ketchup
2 tbsp. Dijon mustard
2 tbsp. brown sugar
1 tsp. Worcestershire sauce
Mince onion. Combine beef, onion, bread crumbs, salt, pepper, egg and a little milk. make into balls and cook in oil. Remove meatballs with slotted spoon. Add ketchup, 1/3 cup water, mustard, brown sugar, and Worcestershire sauce to pan and bring to boil.
Return meatballs to pan and simmer until hot.

broke *** casserole: cook a box of kraft dinner, do not mix the cheese with milk and butter though, open a can of cream of mushroom or cheese soup, dump that in with the cheese packet, add a can of peas and carrots (or corn or whatever) and toss it all together with the cooked ground beef sprinkle cheese on top of it and bake in the oven til cheese is bubbly and browned. serve with tossed salad and whole wheats buns
