There are lots of great Russian dishes, but most take a lot of time to make correctly. Don't listen to any advice about buy something frozen and put ketchup on it. Don't look for shortcuts, they won't work
Look for
"Herring under a fur coat" Selyodka pod shuboy
"Borscht" should have at least 18 ingredients and takes 3-4 hours of work (chopping, slicing) to make. It's better the second day
Piroshki (not pierogie) these are meat pies, but the trick is making the dough that will rise, etc.
If you're not already an accomplished cook who cooks often,
then look for a simple salad like beet salad, served with a good dark bread.

Beef Stroganoff recipe
Ingredients :
1 kg beef (boneless),
4 tb flour,
4 tb ketchup ,
150 g sour cream ,
2 chicken broth ,
1 tb flour pounded with butter ,
1 ea onion ,
salt to taste ,
pepper
Chop the meat long wise fibers (fibres) and beat the pieces a little. After that cut the pieces into stripes 2 cm long and 1/2
cm wide. Season and roll them in flour. Fry chopped onion in the pan and when it is gold brown, put the stripes there. Fry on hot heat until the meat is light brown.
Make a sauce: fry 1 tb flour pounded with butter for few minutes, add sour cream, ketchup, salt. Pour the sauce over meat and stew on a low heat during 15-20 minutes. Don't let sauce to boil, overwise the meat will be hard.

Beef Stroganoff
Finely chopped beef in a sauce. The name of this dish comes from Russian Count Grigory Stroganove (1770-1857) who was one of the richest noblemen and held the highest diplomatic posts. Great gourmet, he loved delicious dishes and always had the best cooks. One of them invented an original dish from scraped meat and it was on the Count's taste. The dish took the name Stroganoff, but, as to the cook, his name was unfairly forgotten.But some people told ("bitter tongues") that the dish was made especially for the Count when he, being old, lost all his teeth and couldn't chew a simple beef stake.
Beefsteak
(English) Beef fried juicy, sweet meat (fillet) sliced and fried in its jus.
Biskvit (sponge cake)
Confectionery dough or cake, made from eggs, sugar and flour.
Borsch (borscht)
This hearty soup traditionally prepared from beets and cabbage and served with a dollop of sour cream is a most popular first course. There are no less than 40 varieties of hot and cold borshch, depending on the vegetables and or meat in them, even some that don't have any beets at all. All borscht recipes are slowly simmered for maximum flavor. The tiny garlic buns, which are often served with it, are akin to the ubiquitous garlic bread of Italian cuisine.

Method
Blend eggs, sugar and butter. Add salt, milk and flour and knead stiff dough. Leave dough for 40 minutes, then roll out finely and cut stripes 1/2 inch long and fry in well preheated fat for 5-7 minutes. Put in a sift to let fat draw away.Cook honey and sugar until dense (honey drop must harden in water). Put stripes in honey syrup and mix thoroughly. Shape small hills on plates. Decorate with nuts and sprinkle with powdered sugar.
Ingredients
5 c flour.
4 ea eggs.
1/2 c milk.
2 ts butter.
1/3 ts salt.
2 tb sugar.
1 c powdered sugar.
Syrup.
1 1/2 c honey.
4 ts sugar.
1 1/2 fat to fry.

I only know Beef Stroganoff (I hope the spelling is right) and blinis but why dont you get information from the internet? type Russian dish and you ll get plenty of recipes.

Try pierogies. You can actually buy them at the grocery store. Otherwise known as "pot stickers". They are little dough pillows filled with potatoes or cheese or red cabbage or sauerkraut. Put the dumplings in a pot of water and let them rise to the surface. Then drain them and fry them with butter and onions. I dip the cabbage and sauerkraut ones in sour cream , not butter and onions. Or make beet soup -borscht. Or put hamburger and rice in cabbage rolls and cover with ketchup and bake -
