Mince pies
Makes 24 pies
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
1 quantity puff pastry
450g/1lb mincemeat
1 egg, beaten with a pinch of salt
55g/2oz caster sugar
60ml/2fl oz milk
Method
1. Heat the oven to 200C/400F/Gas6.
2. Roll out the pastry until it is 2mm thick. Stamp out 24 7.5cm/3inch rounds with a pastry cutter and put in the base of 2 patty trays.
3. Fill each case with 2 tsp mincemeat and brush the edges with a little milk.
4. Stamp out 24 6cm/2½ in rounds for the lids and put on top of the mincemeat, sealing to the edges of the bases. Brush the egg wash over the pies and sprinkle with the caster sugar.
5. Bake in the oven for 20 minutes until golden brown and cool or serve warm.
6. If you make them in advance, store in an air-tight tin and re-heat when needed.
Bread pudding
Serves 9
Preparation time 30 mins to 1 hour
Cooking time 1 to 2 hours
Ingredients
200g/8oz bread, preferably stale, crusts removed
250ml/½ pint milk
150g/6oz mixed dried fruit
50g/2oz mixed peel, chopped
50g/2oz soft brown sugar
50g/2oz suet
2 tsp mixed spice
1 large egg, beaten
ground nutmeg (optional)
icing sugar or caster sugar to decorate
Method
1. Break bread into small pieces and place in a mixing bowl.
2. Pour over the milk and leave to soak for 30 minutes, then beat out the lumps with a fork to form a smooth mixture.
3. Add the fruit, mixed peel, sugar, suet, spice and egg and mix well.
4. Pour the mixture into a greased 18cm/7in square tin, smooth the top and sprinkle with nutmeg if liked.
5. Bake at 180C/350F/Gas4 for about 1-1½ hours until browned. Cool in the tin.
6. Cut the pudding into squares and sprinkle with caster or icing sugar. Alternatively serve hot with custard or cream.

I can help with bread pudding. Play around with this because the subtle differences you can made are endless.
White bread gives a lighter texture, works well with hot cross buns though. Cut off the crusts will make it lighter. Butter the bread. Line a pudding bowl with the bread, or just line it out in a flat dish, up to you.
Half pint of milk with one egg lightly mixed in, adding sugar to your taste (up to a tablespoon). Raisins (or any fruit/dried fruit) stop it being bland. Vanilla too would be great if you have it. Season with nutmeg is nice. Don't quite cover the bread. Brown sugar or a drizzle of honey on top gives a nice crunch.
Half an hour in a meduim oven. It's not rocket science.

Bread Pudding - TO MY GRANS RECIPE - IT IS YUMMY
8oz stale bread
1/2 pint milk
2 oz candied peel
Peel (or zest) of small orange
Peel (or zest) of lemon
4oz currants
2 oz sultanas
3 oz shredded beef suet
2 oz demerara sugar
2 level teaspoon mixed spice
1 large egg
nutmeg
Caster sugar to sprinkle over top when cooked
Cut bread up and mix into bowl with the milk
leave to soak for 20 mins.
Cut up candied peel, grate the orange and lemon peel and add to the bread/milk mix
Add everything else and mix well
Spoon the mix into a 2 pint pyrex pie dish and grate a little nutmeg over the top.
Pop in a preheated oven at 350F (gas mark 4) for 90 to 120 mins or until browned nicely.
Serve hot or cold after sprinkling with caster sugar.

Here's a bread pudding recipe, my husband & his workmates love it, really fruity & spicy.
8oz of bread (doesn't matter about crusts)
1 pint milk
2oz melted butter
3oz soft brown sugar
2 level teaspoons of mixed spice
1 beaten egg
6oz mixed fruit (currants, raisins, sultanas)
Begin by breaking the bread into suitable sized pieces and place them in a bowl. Pour over the milk, then give the mixture a good stir and leave it for about 30 minutes so that the bread becomes well soaked with the milk.
Preheat oven to gas mark 4 350F (180C) and butter a 2-2.5 pint baking dish.
Now add the melted butter, the sugar, mixed spice and beaten egg to the bread mixture. Using a fork, beat the mixture well, making sure that no lumps remain, then stir in the mixed fruit. Spread the mixture in the prepared baking dish and bake in the pre-heated oven for about 1 and a quarter hours. (I recommend turning down the oven and moving it down a shelf for the last half hour!)

Ostkaka - swedish cheesecake Serves 4-6 2 eggs 2 tbsp sugar 250 g of cottage cheese 1.5 tbsp all-purpose flour 1/4 cup peeled and roughly chopped almonds Whip up the eggs and sugar until white and fluffy. Stir in the other ingredients, pour in a greased dish and bake at 350 F for about 30-45 minutes. Do not overcook! Serve with jam and whipped cream.

BREAD PUDDING:
INGREDIENTS
3 apples - peeled, cored and diced
3 cups bread crumbs
1/3 cup white sugar
1/2 cup currants
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
3 eggs, beaten
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Grease a 2 quart casserole dish.
In a large bowl, combine apples, bread crumbs & sugar.
Add currants, nutmeg and cinnamon; mix well.
Add the eggs; stir gently to combine.
Pour into the prepared casserole dish.
Bake in the preheated oven for 30 to 40 minutes,
or until solid and golden brown.
MINCEMEAT PIE:
INGREDIENTS
1 (18 ounce) jar prepared mincemeat pie filling
1 1/2 cups chopped walnuts
2 apple - peeled, cored, and chopped
1/2 cup packed brown sugar
1/4 cup rum
1 tablespoon lemon juice
1 recipe pastry for a 9 inch double crust pie
DIRECTIONS
Combine mincemeat, walnuts, apples, brown sugar, lemon juice and rum in a bowl.
Mix well. Cover and refrigerate overnight.
Preheat oven to 425 degrees F (220 degrees C).
Take filling out of refrigerator & bring to room temperature. Prepare crusts. Stir filling well and pour into shell.
Top with full crust and make slits or make a lattice top.
Crimp edges.
Bake in preheated oven on low shelf for 40 minutes or until golden brown.

I know bread and butter puddings, you can even make it chocolate by adding choco powder to the milk. :
3 slices of bread and butter,
2 oz of sultaners,
3 quarter pints of hot milk,
2 oz of sugar,
one egg.
1)Cut bread into triangles with or without butter.
2)Boil milk with sugar and egg,
3)Pour over the bread and butter and add the sultaners.
4)Leave to soak for half an hour.
5)Cook it for 30 - 45 minutes on a low oven (150)

2cups fat-free (skim) milk
4egg whites
3tablespoons sugar
2tablespoons margarine, melted
1tablespoon vanilla
2teaspoons ground cinnamon
12slices whole wheat bread, cut into 1/2-inch cubes
1/2cup raisins
1/2cup chopped dried apples
Preparation: 1.Preheat oven to 350°F. Spray 2-quart casserole with nonstick cooking spray; set aside.
2.Combine milk, egg whites, sugar, margarine, vanilla and cinnamon in large bowl; mix well. Add bread, raisins and dried apples. Allow to stand 5 minutes.
3.Pour mixture into prepared casserole dish. Bake 35 minutes or until well browned. Cool in dish on wire rack.
Mince pie
Almond Pastry
200g plain flour
25g ground almonds
100g butter
50g icing sugar
Finely grated rind of 1 lemon
1 egg yolk (large)
45ml (3tbsp) milk
Filling
300g mincemeat
To Finish
1 egg, beaten
Method
Pastry: Sift the flour into a large mixing bowl and add the ground almonds. Add the butter cut into pieces and rub in with fingertips. Sift in the icing sugar, add the grated lemon rind and stir to mix. To make in a food processor, put the flour, ground almonds, sifted icing sugar, grated lemon rind and butter in the processor and whiz to crumbs. Turn out into mixing bowl. Combine the egg yolk and milk and mix with a fork. Add to the dry ingredients and using a metal spoon or in mixer with beater, mix until the ingredients are evenly wet. With floured fingers, draw the mixture together to make a rough dough in the bowl. Turn out the pastry onto a lightly floured worktop and knead two or three times so that it is smooth. Allow the pastry to rest before 20 minutes before rolling.
Divide the dough into 2 and dust a worktop with flour. Roll out half the dough thinly on the dusted surface and cut it out into 12x7.5cm/3inch rounds with a fluted cutter. Line a 12 hole in bun tin with the pastry.
Filling: Place a small tablespoons of the mince meat in the centre of each (don't overfill them or they will leak when cooking.
Roll out the remaining dough thinly and cut out 12x6cm/21/cinches rounds with a fluted cutter. If you wish you can reroll the leftover pastry and cut out shapes such as stars and small Christmas trees a little smaller than the pastry rounds.
Brush around the edges of the pies with a little beaten egg and place the rounds on top, sealing the filling in. If you have cut out shapes to go on top place them on sticking them down with a little beaten egg.
To Cook: Preheat an oven to 180°C. Brush the tops of the pies with a little beaten egg and sprinkle over some caster sugar. Place the pies in the preheated oven and cook them for 12-15 minutes until the pastry is crisp and golden. Remove the pies from the oven and allow them to cool for 5 minutes. Remove them from their tins and serve them hot or allow them to cool on a wire rack.
