Actually, apple juice + honey = Cyser.

Also known as honey cider or apple mead.

You will want to make sure to use only 100% apple juice or cider (no preservatives, no additives), and about 3 pounds of honey per gallon. Also, make sure to use yeast nutrients because of the high sugar content.

And with that ratio, you'll end up with an SG of approx. 1.130, so you will want to use either a mead yeast or a wine yeast. I use Red Star Champagne for my Cyser.

No, I brew a lot and that is not a good idea for beer because it would be a apple wine. It probally will come out good if you know how to prepare correct. make sure use use apple juice not from concentrate. It will be cloudy not clear like store bought stuff. Maybe you could find it in an organice store or section. It will be very expensive cheaper to just buy what you want. I make a apple wine every year but I juice fresh apples from local apple trees but it takes hundreds of apples.
