I'm looking for something more authentic than we've been having- we pretty much have tacos rolled into a burrito. Preferably something with ground beef or chicken and/or beans. Thanks~

We make these super burritos at home whenever we have leftover beef roast.

I put the beef in a crock pot in the morning with 2 chipotle peppers and 1 can of diced tomatoes. Let this simmer all day. Generally I cut the beef into small chunks.

The way I layer these is so that I can individually freeze them, but you don't have to do it this way if you aren't going to freeze. I spread spicy refried beans all over the tortilla, then the meat, next some rice, then cheese, fresh cilantro and finely diced tomatoes and onion. I freeze like this.

If I am going to serve immediately I add some fresh diced avacodo. Don't freeze the avacado.

It's really good.

Best Burritos

Ingredients-
1 (10 inch) flour tortilla
1/4 cup vegetarian refried beans
1 slice American cheese
1 pinch ground black pepper
1 teaspoon low-fat sour cream
1 dash hot pepper sauce


Preparation-
In a small pot heat the refried beans until they are heated through, approximately 5 minutes.
Warm the tortilla in a dry frying pan over medium-high heat.
Lay the burrito on a flat surface. Place the refried bean in the center of the burrito, layer the cheese, pepper, sour cream and hot sauce over the beans. Roll the tortilla so that the mixture is wrapped in the center. Serve warm.

CHICKEN BURRITOS

1 lg. can refried beans (Del Rio or Fiesta: neither contains lard)
2 breasts of chicken, boneless
Salsa; 1 jar mild or medium
Peppers; green, yellow, red, diced
Tomatoes, diced
Lettuce, cut
Green onions, diced
Sour cream
Cheese, grated Cheddar or white cheese
Flour tortillas, burrito size

You may wish to prepare your own red beans, otherwise, use the canned beans. Bake chicken breasts, sprinkling Cajun seasoning on top if you wish. Cut chicken into bite-size pieces. Mix Salsa with beans. Place chicken and beans on tortilla and roll up. Put into rectangular Pyrex. Add more Salsa to top. Sprinkle with grated cheese. Before serving, microwave for 6-8 minutes, then turn dish and repeat for another 6-8 minutes. The cheese should be melted and the burritos "bubbly".
Condiments: Prepare first. Dice peppers, onions, tomatoes and lettuce. These items and sour cream are to be sprinkled on the burrito by each individual. Salsa: in a dish for those that enjoy more on top of burrito. Serves 6-8.

Cooked, Cubed Boneless Chicken
Taco Sauce
Taco Seasoning
1 bag ofCheddar Cheese Shreeded
6 Flour Tortilla Shells
Sour Cream (if desired)

In a glass 13 by 9 backing dish, pour enough taco sauce to lightly cover the bottom of the dish.

Cook Chicken in frying pan, add Taco seasoning as package states.

Fill Torillas with Chicken Mixture & fold them seam side down in the dish. Pour taco sauce over tortillas to cover & then add as much cheddar cheese until completely covered.

Cover with Foil & bake in the oven AT 350 for about 25 minutes until the cheese is all nice & melted!

Just go to Taco Bell and get a yummy bean burrito. Tastes great, fills you up and only 98 cents. So you can buy two or three and you have a nice warm, inexpensive lunch.

it is so candy! Greek nutrition has various vegetarian friendly nutrition. additionally, in case you're in the Tempe, AZ area, the eating place "green" is magnificent for greens and meat eaters alike.
