Everyone tells me not to eat egg yolks because of cholesterol. So, what should I do with them. Seems like a waste to throw them away.

The yolks are a good hair conditioner. After a shampoo, add some whipped yolks to your hair, wait 10 minutes and rinse.

Well, your body does NEED some cholesterol. The recommended daily MINIMUM for Cholesterol (according to the RDI listing) is 300 mg for overall basic health.
If you're not getting more than 3-400 mg of Cholesterol per day in your diet, it would be healthier for you to eat the egg yolks with your eggs.

There is a lot of misnomer out there about Cholesterol, fat, sugar, and Sodium.... your body DOES need these things for basic health and maintenance, but too much is harmful. It's moderation in all things that's important... don't go overboard, but you still need to cover the minimum basics.
If you're not sure if your Cholesterol intake or blood levels are too high, you could check with a nutritionist or a doctor.... but if you have very little Cholesterol in your diet, I would eat the yolk.

the human body produces it's own cholesterol in the liver. 70% of the total cholesterol value is from genetic factors and the diet has very little effect on this. that being the case there is nothing wrong with consuming several egg yolks daily. most people don't know jack about nutrition or what's really healthy they simply repeat what they have seen or heard on TV which is the absolute worst place to get accurate information on health and fitness...

Even when watching your cholesterol count you can still have 2 egg yolks a week, high in protein and natures natural steroid. You could have them poached or boiled to reduce fat but then again you could make a custard or use them as an ingredient in a recipe and that way you are not eating the entire egg, just a portion.

If you don't have high cholesterol there's no need to not eat at least some of them. They are full of protein!
