4 cups Kellogg's® Rice Bubbles®
1 1/2 cups icing sugar
1 cup desiccated coconut
250g copha®, chopped
3 tbsp cocoa
›› In a large bowl, mix the Kellogg's® Rice Bubbles®, icing sugar, cocoa & coconut.
›› Slowly melt the copha® in a saucepan over a low heat.
›› Allow to cool slightly.
›› Add to Rice Bubbles mixture, stirring until well combined.
›› Spoon mixture into paper patty cases and refrigerate until firm
Makes 24 (approximately)

Anzac Biscuits is the most Australian biscuit you can make and its so easy!!! I really couldn't think of anything more appropriate than that.
ANZAC Biscuit Popular Version
(From a original recipe provided by Mr Bob Lawson, an ANZAC present at the Gallipoli landing)
Ingredients
1 cup each of plain flour, sugar, rolled oats and coconut
4 oz butter
1 tablespoon treacle (golden syrup)
2 tablespoons boiling water
1 teaspoon carbonate soda (add a little more water if mixture is too dry)
Method
1. Grease biscuit tray and pre heat oven to 180C
2. Combine dry ingredients
3. Melt together butter and golden syrup. Combine water and soda add to butter mixture.
4. Mix butter mixture and dry ingredients.
5. Drop teaspoons of mixture onto tray allowing room for spreading.
6. Bake for 10-15 minutes or until golden. Allow to cool on tray for a few minutes before transferring to cooling racks
If you want an actual dessert rather than a cookie/biscuit than Pavlova would be the way to go or lamingtons....

Lamingtons are just vanilla sponge cake up into squares or 'fingers' and then dipped in a chocolate mixture and then dipped in desicated coconut. Very very easy for a 3rd grader to do.

Why not try ANZAC Biscuits? These were made and sent to the Australian and New Zealand soldiers during World War One, because they were tasty, robust (could take being transported long distances) and would arrive edible, even after a few months.
The recipe follows.
3/4 cup rolled oats, 1/2 cup sugar, 1/4 cup desiccated coconut, 3/4 cup plain flour, 2 tablespoons Golden Syrup, 1 teaspoon Bi-carb of Soda, 2 tablespoons boiling water, 1/2 cup melted butter.
Pre-warm oven to 160C (325F)
Spray oven trays (cookie sheets) lightly with oil.
Mix oats, sugar, coconut and flour.
Mix Golden syrup, soda and boiling water, while frothing add melted butter, pour into dry ingredients and mix well.
Drop spoonfuls of the mix onto greased oven trays, allowing room for them to spread.
Bake for 15 - 18 minutes until golden.
They will come out of the oven soft, but will harden on cooling.
Cool on a wire rack.
Makes about 30.
This is the melt and mix method, and they are delicious!
**The chocolate crackles receipe is good too, and a favorite with the kids.
