A lot of cats don't like to be held especially after they have had kittens. As far as her laying on the table sounds about right. Cats have a habit of doing exactly what you do not want them to do just to show you who is boss.
However, you do need to take her back to the Vet for a follow up visit to make she is completely over being sick.

If she'll let you, use a clean, damp cloth to wipe her eye from the nose outward. Use water only and be very gentle. This should help her eye get better because this is something she can't do for herself.

Most of the time cats prefer to live their lives on their own terms. When she swishes her tail back and forth that means she's getting annoyed. She might settle down if you give her a kitty treat. So she doesn't like to be picked up, then don't. If you calmly sit there talking to her, she may eventually come to you. Don't get too impatient. You may have to be content to just pat her on the head or pet her without picking her up. Just think about how big you look to that little kitty. Put yourself in her place and you can see how scary it might be.

Also, some cats just meow more than others. I once had one that would meow back to me whenever I said anything to him, which was fun. There is probably nothing really wrong with Shanti, but a follow-up call to the vet might be a good idea.

If her behavior is changed, and she has stopped eating and drinking, then there is something wrong. She is probably sick. It's a good idea to take her to the vet and get some antibiotics for her.
