A group of us from church are trading off cooking meals for them while they go through this rough time...their only requests were no mexican and no casseroles. I have to drop the meal off at someone else's house at around 3:00 and she is going to take it to them at 5:00. What is a good, easy, kid friendly meal I could prepare that is easily portable?

Oven Fried Cornflake Chicken
4 boneless skinless chicken breasts
1 1/2 cups corn flakes, made into about 3/4 cup crumbs
2 tablespoons melted margarine
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
nonstick cooking spray
Preheat the oven to 375 degrees. Place the cornflake crumbs in a shallow dish. In a bowl, combine the melted margarine, lemon juice, salt and pepper. Use a fork to beat the mixture together. Dip the chicken into the lemon-margarine mixture and then into the crumbs. Place the coated pieces on a baking sheet that has been sprayed with non-stick spray. Repeat with the remaining chicken. Arrange them so they don't touch each other if possible. Bake at 375° for 45 minutes.

Pan Fried Potatoes
5-6 potatoes, sliced (peel-on optional)
1 large onion, sliced
2 tablespoons bacon fat
1-2 tablespoon paprika
salt
In a skillet, melt bacon fat. Add onions and saute 2-3 minutes.
Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange). Fry, covered, over medium heat until soft and tender. If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.
*Fry up a couple slices of bacon and use the leftover grease for the potatoes*

Green Beans with Cherry Tomatoes
1 1/2 lbs green beans
1 tablespoon butter
3/4 teaspoon garlic salt
1 tablespoon sugar
1/2 teaspoon basil
salt
pepper
1/2 pint cherry tomatoes, cut in half. Cook beans in water, until tender. In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper. Swish cherry tomato halves around until barely soft and heated, but not squishy. Add the drained beans and mix well. *You can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works*


The chicken is outstanding and kids love the potatoes and the parents will love that the kids will love the healthy green beans! A great dessert would be strawberry shortcake made with either angel food cake, Jiffy baking mix biscuits, etc. and strawberrys and whipped cream! Or fresh baked brownies or gingerbread cookies!

lasagna is pretty easy- it could be homemade, or store bought. Add a salad and garlic bread to it to complete the meal! Some other ideas would be cooking a chicken in the crockpot, and then take it out and remove all the meat from the bones. Make some mashed potatoes and a vegetable such as broccoli or corn. You could also make some homemade soup or beef stew. Those are good because the whole meal is in one pot.

How wonderful of you. This is a recipe for Chicken and Dumplings. This was always a standard for taking to my sick older neighbors.

Easy-to-make homemade dumplings simmer with chicken in a light broth for a soul-satisfying soup."
INGREDIENTS:
1 (3 pound) whole chicken
1 onion, quartered
2 slices lemon
salt and pepper to taste
3 cups water
1 bay leaf 1/2 teaspoon dried thyme
2 cups all-purpose flour
3 tablespoons shortening
1 teaspoon salt
1/4 cup water

DIRECTIONS:
1. In a heavy pot with a lid place the chicken, onion, lemon, salt, pepper, water, bay leaf and thyme. Simmer all over low heat until tender, about 1 hour.
2. Let chicken cool slightly in pot, then remove and take the meat off of the bones. Discard the bones and skin and skim excess fat off the broth if desired. Discard the onion, lemon and bay leaf. If desired, wash out pot well. Return broth and chicken pieces to the pot. Simmer over low heat while making the dumplings.
3. To Make Dumplings: In a medium mixing bowl, cut shortening into the flour and salt. Stir in 1/4 cup water (more if needed) to form a soft dough. Roll out dough on a floured surface, with a rolling pin, until very thin. Cut into 1 inch wide strips using a pizza cutter or knife. Tear off 1 inch long pieces from these strips and drop into simmering broth and chicken meat. Simmer for 10 minutes with the lid off, then 10 minutes more with the lid on. Serve immediately.

The chicken and dumplings are probably the best recipe to make. I do not think ANYTHING spicey can be good for the Mom.
Add a side of cooked apples and a loaf of french bread...

They should be happy with just about anything...it's the thought that counts. The mom...may not eat much...the chemo is pretty tough on some folks...again..nice thought.

hot dogs, buns, and the fixin'.Some baked beans and a cke for dessert is a crowd pleaser for all ages,be sure you have enough for secong helpings,It might be nice to add paper plates and cutlery.And also drinks---juice,water etc..That will really a help,and no dishes to wash--everything is disposable,and half the work,

meatball subs. they could pop the meatballs in the microwave with some mozzarella cheese and toss it on sub rolls. All you have to do is make or buy the meatballs and precook them in spaghetti sauce. don't forget the sub rolls and mozzarella cheese! :)

Banquet Frozen(2 leg) chicken dinners! Frozen anything meals.

My grandkids love this one. These. They get to choose what they eat.

Chicken breasts. Chicken legs. Beans or peas. Mashed potatoes & gravy.
