I would recommend the Marriott on Kalapaki, especially if you won't be getting a car. It's right on the beach where you can swim and they even have surf lessons and a beach hut so you can learn and rent some gear. They're also next door to a shopping complex with excellent restaurants (I'd HIGHLY recommend going to Sushi Bushido, it's my favorite restaurant on the island, but SKIP going to JJ's, the food sucks and is waaaaaaay overpriced) and some moderate shopping, and provide shuttles to some other places like K-mart, Kukui Grove shopping center, Coconut Market Place shopping center and such, so you'll have lots to do. If you are getting a car, the Marriott is in a pretty central location, it'll take you the same amount of time to get to the north shore to see Hanalei and the south and west sides to see Waimea Canyon and Poipu. It's less pricey than resorts in Poipu, and you'll get your money's worth. I recommend making your reservations early to avoid paying higher prices.

The Hyatt is also great and worth your money, but it's busier and more expensive.
